Places like Missoula, Charlotte, Indianapolis, and Knoxville shouldn't be any problem at all. If you are going to find gluten free and raw food anywhere, it will be in places on HappyCow. I've been to some of those midwestern cities, and they don't have a lot of choices sometimes, to say the least. You can also bring a cooler with you and stock up on raw foods from health food stores as you go and have lots of picnics. You can re-freeze ice packs in hotel/motel fridges at night. Also try to look for farmer's markets and farm stands.
