Still looking for our cook. In my experience it is really important to have the right team, so I am patiently continuing the search.
I have been travelling in Latin America since the late 90's and have been vegetarian for 30 years.
While one does not starve to death in Latin America, typically the menu options and service I have encountered have been generic and overpriced. But I have encountered many regional dishes that just happen to be vegetarian.
But being from Vancouver, I want to bring some Asian flavours to where I am. I am convinced that the opportunities are excellent, once we get the team together.
What do you think? What are your experiences with restaurants in Latin America?
