| Help Converting to Vegetarianism Hello, for health reasons I need to convert to a vegetarian diet. I actually tried to go vegan when I was at Uni for ethical reasons and although I loved the diet I couldn't maintain it because I am in a committed relationship and am primarily responsible for the cooking, and also cooking for my mother. So, I need to find a way to make the recipes my partner and my mother love meat-less but still tastey. And my partner hates beans so can't put them in. Could you please help me with the following: - What can I use instead of sausages in sausage hotpot? - What can I use instead of mince in meatballs or meatlessballs? - What can I use instead of chicken in Enchiladas, and instead of chicken in chicken schnitzel? - What can I use instead of pork in sweet chili pork stir fry? - What can I use instead of beef in a hearty beef stew? | help for fussy 5 year old eater ok, so this is prob going to be a long post in order to get in all the details. I'm after help to know what are other sources of proteen. I am not a vegitarian myself, so although I know there are nonmeat sources of proteen, I don't know what they are. I have a fussy 5 year old who is currently suffering from very soft poo, or diarea. We are wondering if this could be down to lack of proteen since he won't eat meat other than chicken nuggets or sausages, and I won't let him eat much of these as they are junk food. I have decided that the easiest option is to go down the vegitarian path with him, but don't know what the vegitarian sources of proteen are. Currently the things as well as meat that he won't eat are: eggs, baked beans, carrotts, cooked cheese, cheese sauce, soya mince, cooked mushrooms, anything that is in a pie. Please can anybody help by: A) explaining to me in a simple way what the vegitarian sources of proteen are B) suggesting some simple recipies that include these sources of proteen that might appeal to this fussy eater. | holding vitamix still = bad? on vitamix Have you heard of the saying that you shouldn't tightly hold down the jar because letting it wiggle actually lessens the stress on the motor? why is this? | Home Made Hemp Milk I've been making hemp milk for quite some time now and here is the recipe for it. Note: you will need a very powerful blender such as a Vita-Mix for this recipe. Also a large bowl and milk filter bags. You can get the bags online if you do a search for them. 1 cup hulled hemp seeds 7 cups of filtered water vanilla extract raw honey or sweetener to taste pinch of sea salt Fill your blender with the 7 cups of water. Add the hemp seed, vanilla and sweetener. Blend until all the seeds are broken up. When that is done let it sit for a few minutes, then blend again. Filter through two milk bags into a large bowl. Put into a glass container. The container should have a tight fitting lid because you have to shake the milk up before using. | Homemade Soymilk I just wanted to let everyone know that I found a really easy way to make soymilk at home without one of those expensive automatic machines. I got what is called a "nut milk bag" for $5 at the health food store, soak the beans all day (or night), blend them with water (amount of beans X 2), and then pour it into nut milk bag. All you have to do is squeeze the soymilk right out of it, and the beans stay in the bag. Takes me about 5 minutes, and simple as pie. | Honey Frosting (not vegan) Hi, I got this recipe from a fan club for the site www.holyfoodimports.com, it's a company that imports all vegetarian (not vegan) products from The Holy Land. I love the honey- and apparently someone else does too because he/she posted the recipe: 1/4 cup Nazarene Wildflower Honey 1/2 cup unsalted butter One (8-ounce) package regular or reduced-fat cream cheese, In a medium bowl, whisk all ingredients until smooth. | how to do a lighter cake Hi So i've been vegan since 2 years and as i'm living in france there is no vegan bakery around. So as i've a really sweet tooth I had to learn how to bake. and so far there is 4,5 recipe that i really handle, and are great: pancakes, brownies, apple pie, muffin, carrot cake, banana cake, biscuit. I use mostly apple sauce, banana, carrot, zucchini, and flour+water cooked as it's great to make everything glue together.. but the problem is that my cakes are sooo heavy. it's good but sometimes i wish i could do something lighter. i tried different year, egg powder replacer.. it just doesn't work and i really miss this light buttery texture that we find in a lot of regular ( non vegan) cake, pastry... | How to make tahini PLEASE, anyone know how to make tahini? I've been searching for a while. I tried to make it in my juicer, which I can make nut butters with an attachment. It only flung sesame seeds all about my kitchen. I can't imagine it being too difficult or needing too much technology since it is a basic in 3rd world countries. I see no reason for it to cost $10/lb at my local HF store. I start muttering in the aisle every time I see it (hummus too for that matter) and nearly cause a scene. I just want it to be around the $2-3 range when I used it back in the day. It isn't as though there is a sesame shortage, is there? Also, please keep this thread for MAKING tahini; not tahini sauce, or hummus or baba g, or tell me to sub nut butters (thanks though). I want to know how to make tahini from scratch, it is the topic. | Hummus Tomolives This is a appetizer i came up with while messing around after making hummus pita vegan pizza grape or cherry tomatos pitted black olives hummus raw spinach pack the hummus inside the wholes of the olive where the pit used to be, cut the center out of the tomato, stuff olive in tomato and fill any gap with hummus, top with rolled up piece of spinach sticking straight out the top like a stem a little time consuming but would be great as a party finger food dish :) stay vegan Post Date: 12/25/10, Replies: 0 | ||

| In Search of A Beginner's Vegan Cookbook I'm slowly transitioning, but I'm looking for a vegan cookbook geared towards someone who has never cooked vegan dishes before. A lot of the ingredients in some of the books, I've never even heard of, and I have no idea how to properly cook it... I just want some easy meals that taste great. Once I get the hang out it, I'd like more complex ones. I also enjoy seeing photos in cookbooks which I haven't see much of in any of the ones I've seen. I've tried Engine 2 Kitchen Rescue, Oh She Glows, Forks over Knives and Ani's Raw Food Essentials. I just want something easy to understand!! Simple, simple, simple! | Kumquats and Surinam Cherries? Here is my problem: I have 2 trees absolutely loaded with kumquats, and I can't seem to find any good way to use lots of them up before they fall on the ground. I sell some of them to the local health food store, but there isn't a huge demand for these little guys. I also have a tree literally dripping with Suriname Cherries. (a lot different than sweet cherries) I tried making jam out of them, but it tasted awful! Does anybody have any good ideas for how I can use these fruits before they all just rot on the ground? | Losing weight the vegan way - How? I used to struggle with going dairy-free as I love milk and cheese. What helped me is the support system I have at home starting with my hubby. We had a talk as a family, discussed with our teens and outlining the reason why there's gonna be a big change in our meals and the benefits we will all enjoy if we forgo dairy products. The kids were supportive. Nothing more excites them than going through recipes after recipes as a family each Sunday to prepare the meals for the entire week ahead. My daughter just got hold of Dieting the Santa Barbara Way book and the recipes are perfect for vegetarian and vegans. | Macaroni Fail Hello all, I'm struggling with finding the best Vegan Sub. for Macaroni and Cheese any good recipes? It is my favorite food to eat. I use to make a Baked White Cheddar Macaroni and Cheese Dish. Its hard enough giving up dairy. Giving up my favorite food is even harder. What are the best tasting Vegan Cheeses? And the other way is easy and you throw away the water used otherwise. For boiling vegtables use a smal amount of water- soluble vitamins and minerals are destroied by large amounts. you then add hot notboiling water to bring it up to the needed stockvolume. to liven up dishes try adding vinegar, wine green tea any alchol along with stock -stronger tasting liquids in les volume. | Meat Subsitution advice Hi, I have a recipe for curried chicken with cashew nuts that I want to change to be a vegetarian recipe, but I don't cook very often and feel lost without a proper recipe to follow :) The original recipe builds the curry base and then cooks the chicken in it for 45-50 minutes. I am thinking of subsituting the chicken either with tofu or with potato. If I choose tofu, how long should I cook it for? I have read that it should be popped in at the last minute, but then I am worried that it won't pick up the flavours of the curry. If I use potato, can I use the same cooking time as chicken?
