| "Pulled" Seitan My Seitan is pretty decent; I use Vital Gluten (instead of kneading/rinsing flour) and season the dough with Garlic powder, onion powder, Paprika, Molasses, Aminos, salt and pepper. I makes a good balance. I haven't yet figured out how to "pull it" or give it the pulled "pork" texture we find in some commercial brands. The cuts with the knife are too clean and don't allow the Seitan to hold the sauce; it also gets slippery and falls from the sandwich all over the plate. | Barbecued Seitan Ribz 1 cup vital wheat gluten 2 teaspoons smoked Spanish paprika 2 tablespoons nutritional yeast 2 teaspoons onion powder 1 teaspoon garlic powder 3/​4 cup water 2 tablespoons tahini or other nut butter 1 teaspoon Liquid Smoke 1 tablespoon soy sauce about 1 cup of your favorite barbecue sauce Preheat the oven to 350 and lightly spray an 8x8 baking dish with canola oil. Mix the first 5 ingredients together in a large bowl. Mix the water with the nut butter, Liquid Smoke, and soy sauce and add it to the dry ingredients. Stir to mix well and then knead lightly in the bowl for a couple of minutes. Put the dough into the baking dish and flatten it so that it evenly fills the pan. Take a sharp knife and cut it into 8 strips; then turn the pan and cut those strips in half to form 16 pieces. Put it in the oven and bake for 25 minutes. While it's cooking prepare your grill. Remove it from the oven and carefully re-cut each strip, going over each cut to make sure that the ribz will pull apart easily later. Generously brush the top with barbecue sauce. Take it to the grill and invert the whole baking dish onto the grill (or use a large spatula to lift the seitan out, placing it sauce-side down on the grill). Brush the top of the seitan with more sauce. Watch it closely to make sure that it doesn't burn. When sufficiently brown on one side, turn over and cook the other side, adding more sauce, if necessary. When done, remove to a platter and cut or pull apart the individual ribs to serve. | Black Bean and Zucchini Fajitas 1. Saute 1/​2 small diced onion, 4 oz diced mushrooms, and 2 diced zucchini in skillet until veggies begin to soften. 2. Add 1 can drained black beans. 3. Season with cumin, chili powder, braggs/​soy sauce/​or salt, garlic powder, paprika, cayenne, and oregano. Mix well. 4. Add 1/​2 cup+ of you favorite salsa. 5. Cook until veggies are to the tenderness of your liking. 6. Just before veggies are done, 1-2 handfuls chopped spinach, stir in, turn off heat and let spinach wilt. | Can I make this bread in a bread machine? Please excuse my bread making ignorance; I don't do much baking at all. I've used a bread maker a total of three times recently to make gluten-free vegan bread for my partner. I want to make a recipe(today) for myself that is meant to be made in one of those little..bread..pans. I don't have any such thing so I want to attempt to make it in the bread maker. Please tell me how(what settings, if it's even possible, etc). Thanks! Recipe: familynature.ca/vegan-lemon-loaf/ Lemon Loaf 2 cups all purpose flour 1 3/4 cups sugar 1 1/4 tsp baking soda 1/4 tsp salt zest of one or two lemons (optional) 2/3 cup lemon juice (fresh is best, but the other stuff is good too) 2/3 cup vegan milk (I used vanilla soy milk) 1/4 cup oil 1 tsp vanilla extract Lemon Glaze 1 cup icing sugar 3 tbsp lemon juice Preheat oven to 350?. Prepare a loaf pan with dairy-free cooking spray and line the bottom with parchment paper. Whisk flour, sugar, baking soda and salt in a medium bowl. In a separate bowl combine lemon zest, lemon juice, vegan milk, oil and vanilla extract. Add to dry ingredients and mix until combined. Scrape the batter into the loaf pan. Bake for about 60 minutes or until a tester comes out clean. Let sit in the pan for a few minutes, then turn it upside down on a rack to cool. The author was a guy. I believe he was a chef. He has two daughters. I think he was doing a budget friendly cookbook...'frugal' or 'thrify' or some like word was in the title. | Cashew Chia Seeds Pudding Recipe Makes 2-4 servings Ingredients ¼ cup chia seeds 1 cup cashews 2 cups water pinch of salt 1 tbsp. raw honey or agave nectar Directions 1. Prepare the cashew milk: Put 1 cup cashews, 2 cups water, a pinch of salt, and 1 tablespoon of natural sweetener of your choice. Raw honey or agave nectar are my favorites. 2. Blend ingredients on high for about 90 seconds. 3. Strain the mixture through a nut milk bag or a strainer. This recipe yields two cups of milk and will last in the fridge for four days. 4. Put the seeds in a bowl and stir in 1 cup of milk. 5. Whisk together with until the seeds are well incorporated – about 10 minutes. The pudding will get clumpy if you don’t keep stirring. You’ll know it’s ready when it sets and gets a pudding-like texture. 6. Add the toppings of our choice – chopped apples, pitted cherries, chopped pecans, currants, or raisins are all great options. | Celebration Okay firstly a confession: I personally am not currently a vegetarian I'm working towards it however my best friend is a Vegan. I am so proud of her because this time last year she decided to turn vegan and she has come so far and done so well, it is also her 20th Birthday coming up. As she adores Alice in Wonderland, as a surprise both for her birthday and her year of being a committed vegan, I wanted to give my friend her very own Mad Hatter Tea Party. The only issue I have is I really have no idea what sort of things to make for her to eat. There are some incredible cake recipes out there (I know I've tried them with her) but in terms of savoury food we can have as afternoon tea and pick at, I don't know where to start and honestly any advice would be warmly welcomed. | Cheap Vegetarian Recipes for College I am a vegetarian (and somewhat, but not entirely vegan) and will be attending college this fall. I am looking for some recipes that are inexpensive and require little cookware. (I will be bringing a couple knives, a mixing bowl, two pots, a frying pan, and a colander to school along with basic dining ware.) My cafeteria plan will allow me two meals a day, and the third I would like to be vegetarian/vegan and prepared by me. I'm just looking for some basic recipes that don't require too much preparation or too expensive of ingredients. I've been looking through recipes online and am also ordering the book "Vegan with a Vengeance," but I'm still worried that I will not be able to afford the majority of recipes I am finding. | Chicken Seitan Texture I was wondering if anyone could give me advice on how to get the meat like texture of white meat chicken in my seitan. I've made seitan and it comes out smooth without much of a grain. When I've eatan chicken seitan at restaurants the grain was so perfect you could not tell you weren't eating real meat other than there were no bones. | Chocolate Chip Cookies 2 cups plus 2 tablespoons flour 1 teaspoon baking soda 1 teaspoon salt 1 cup earth balance spread 1 cup white sugar 1/​2 cup brown sugar 1 teaspoon vanilla extract egg replacer for 2 eggs 2 cups (12-ounce package) semi-sweet chocolate chips INSTRUCTIONS: 1. Combine flour, baking soda and salt in small bowl. 2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. 3. Add egg replacer one at a time, beating well after each addition; gradually beat in flour mixture. 4. Stir in chips. 5. Drop by rounded teaspoon onto ungreased baking sheets. 6. Bake in preheated 375-degree oven for 8-9 minutes. If you take them out before the tops look fully set they will be chewy. yum. 7. Let stand for 3-5 minutes; remove to wire racks to cool completely. | Chocolate Cranberry Almond Clusters Today I tried the chocolate cranberry almond clusters. I made it for my husband who made a specific request for it. YUM! He is so impressed! So I just thought to share with you all. These are the ingredients I used. -American Heritage Chocolate Block -1/2 cup of dried cranberries -1/2 cup of whole almonds - chopped & toasted In a bowl, combine the cranberries and almonds. Spoon out about 1 tablespoon clusters onto a baking sheet and allow it to spread. Keep it for 10 minutes in the refrigerator, serve and store at room temperature. Melt the chocolate (I used a double broiler to do that). Mix it with the cranberries and almonds. I’m sure all chocolate lovers gonna love it just as my husband did. | Christmas menu recipe ideas I am having a small Xmas dinner prior to the big day and am in need interesting menu ideas. Since I am eastern european I thought it would be a nice change to offer a traditional american/canadian xmas meal. Only problem is, what do I serve? I need ideas for a menu that would be interesting and appealing to the senses. I am not too sure about bird substitutes and I think some of the diners would not appreciate an imitation turkey, so I need something different... if anybody has any ideas please offer them to the forum.
