| Can't remember name of cookbook... Hi there, a couple weeks ago I was surfing around and found a vegan cookbook I wanted to check out. I thought I wrote it down somewhere but can't find it. The author was a guy. I believe he was a chef. He has two daughters. I think he was doing a budget friendly cookbook...'frugal' or 'thrify' or some like word was in the title. | Help Converting to Vegetarianism Hello, for health reasons I need to convert to a vegetarian diet. I actually tried to go vegan when I was at Uni for ethical reasons and although I loved the diet I couldn't maintain it because I am in a committed relationship and am primarily responsible for the cooking, and also cooking for my mother. So, I need to find a way to make the recipes my partner and my mother love meat-less but still tastey. And my partner hates beans so can't put them in. Could you please help me with the following: - What can I use instead of sausages in sausage hotpot? - What can I use instead of mince in meatballs or meatlessballs? - What can I use instead of chicken in Enchiladas, and instead of chicken in chicken schnitzel? - What can I use instead of pork in sweet chili pork stir fry? - What can I use instead of beef in a hearty beef stew? | Vegan Chai Latte Cupcakes Vegan Chai Latte Cupcakes This recipe was adapted from Vegan Cupcakes Take Over the World. I made them for my family this weekend and they were gone in under 20 minutes. SO good!! I can't see to post the photo here but you can see it on my web site: sweetvegan.net Ingredients: 1 cup soy milk 4 black tea bags or 2 tablespoons loose leaf black tea 1 teaspoon apple cider vinegar 1 1/4 cups all-purpose flour 2 tablespoons cornstarch 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons ground cinnamon 1 teaspoon ground cardamom 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1/3 cup canola oil 3/4 cup granulated sugar 2 teaspoons vanilla extract Method: Preheat the oven to 350ËšF. Heat soy milk in a small saucepan or microwave until almost boiling. Remove from heat and add tea bags. Allow to steep for 10 minutes. Remove teabags, squeezing out as much soy milk as possible. Re-measure, and add more soy milk to make exactly 1 cup. Whisk in cider vinegar, and side aside until curdled. In a large bowl, sift together the flour, cornstarch, baking powder, baking soda, salt, and spices. Combine and add to flour mixture the soy milk, oil, sugar, and vanilla. Stir until smooth. Divide batter between 12 cupcake liners and bake for 20 minutes. Allow to cool completely before frosting. The cupcakes in this recipe were frosted with Vanilla Butter Icing and sprinkled with sifted icing sugar and cinnamon. Post Date: 10/19/11, Replies: 1 | ||
| Raw Chocolate Elixir Hey guys, I make this shake about every other day now. It's super delicious. (see the bottom of this post for a confession I have to make about this drink...) Here's the recipe: INGREDIENTS 1 Young coconut 1 to 2 tbsp raw cacao powder, to taste 1 to 2 ice cubes DIRECTIONS 1) Crack open that young coconut and pour all the water into your blender. You might want to strain the water if your cracking is sloppy — no one likes to drink splinters! 2) Next, scrape out the meat of the coconut and clean off any of the hard wood bits that might have come off with the scrapings. I like to rinse the coconut meat under water to be sure I have removed all the little wood bits. 3) Toss all of the cleaned meat into the blender, along with the raw cacao powder and ice cubes, and blend on high-speed until all of the meat is broken down into heavenly bliss (about 30 to 45 seconds for me). 4) Pour into your favorite glass and enjoy! | Vegan Bacon So I was very skeptical about this recipe I just tried, but it turned out fantastic! I'd like to share this with all of you, I adjusted the recipe I found for any items I did not have. 3.5 ounces shiitake mushrooms cut into thin pieces and caps cut off 1 tbsp olive oil 1/2 tsp truffle oil 1/2 tsp truffle salt sesame ginger seeds I mixed all of these together and then marinated the shiitake mushrooms, after I baked in the oven on convection and 350 degrees for about 15 minutes . | diabetic and for everyone else Beet/apple/ginger salad: * wash, quarter and steam 2 large beets until skin can be easily pierced with a fork. Remove skin. Cut each quarter into fourths (easier to eat) *grate 1 red apple (best size is medium size grate of a four-sided grater) *thumb-sized chunk ginger, peeled and grated (use same grate size as apple) few pinches sea salt Combine all in a large bowl and blend Dressing: juice of 1 or 2 lemons 2-3 drops stevia clear liquid Combine both in a small cup. Taste should be tart, yet sweet. Blend well with salad ingredients. Wait at least 30 minutes for flavors to blend. Prepared as a Raw Salad: Choose beets that are soft. (In this way, they are sweeter and easier to digest.) Follow same instructions above. *Dash of Wisdom: Beet cleanses the blood which improves circulation; apple is cleansing and beneficial for the liver and gall bladder, actually softening gallstones. | Chocolate Cranberry Almond Clusters Today I tried the chocolate cranberry almond clusters. I made it for my husband who made a specific request for it. YUM! He is so impressed! So I just thought to share with you all. These are the ingredients I used. -American Heritage Chocolate Block -1/2 cup of dried cranberries -1/2 cup of whole almonds - chopped & toasted In a bowl, combine the cranberries and almonds. Spoon out about 1 tablespoon clusters onto a baking sheet and allow it to spread. Keep it for 10 minutes in the refrigerator, serve and store at room temperature. Melt the chocolate (I used a double broiler to do that). Mix it with the cranberries and almonds. I’m sure all chocolate lovers gonna love it just as my husband did. | vegan chocolate cake and frosting disaster Hello!! I am trying to make a vegan chocolate cake and vegan chocolate frosting with no success! I have tried earth balance for butter replacement, the one with soy (yellow box) and without soy (red box). Cakes taste kid of salty/oily/weird/fishy but if I add a lot of cocoa powder and pure vanilla extract, they can be edible... kind of. The major problem I have is with frosting! There is no way earth balance can decently substitute butter. Frosting tastes bad, real bad. I experimented again tonight with both cake and frosting. Cake as usual is oily and salty, frosting is horrible! I refrigerated for a couple of hours and it now even tastes a bit bitter. Definitely not something to serve to any guest!! I made the frosting with half shortening and half earth balance stick, added a lot of powdered sugar, much more than the recipe called for, a lot of pure vanilla extract and adjusted consistency with coconut milk. I need help!!! what do you normally use for frosting? Do you know of another brand I can try? Am I doing anything wrong? I cannot use coconut spread as I live in Florida and it will melt before my eyes, here it doesn't keep in solid form at room temperature. Any help is much appreciated!! Thank you!! | Shelf life Hello, I have a tough question: recently I started to make vegan ganache at home. I think that the most appropriate substitution for heavy cream is "almond cream" (almond milk with a lot a almonds and a bit of water: around 25% fat). It tastes delicious but the problem is shelf life: after a few days it loses its taste. I don't know if is the almond cream or the fresh fruits I use for the ganache. So, someone have a suggestion? | Cashew Chia Seeds Pudding Recipe Makes 2-4 servings Ingredients ¼ cup chia seeds 1 cup cashews 2 cups water pinch of salt 1 tbsp. raw honey or agave nectar Directions 1. Prepare the cashew milk: Put 1 cup cashews, 2 cups water, a pinch of salt, and 1 tablespoon of natural sweetener of your choice. Raw honey or agave nectar are my favorites. 2. Blend ingredients on high for about 90 seconds. 3. Strain the mixture through a nut milk bag or a strainer. This recipe yields two cups of milk and will last in the fridge for four days. 4. Put the seeds in a bowl and stir in 1 cup of milk. 5. Whisk together with until the seeds are well incorporated – about 10 minutes. The pudding will get clumpy if you don’t keep stirring. You’ll know it’s ready when it sets and gets a pudding-like texture. 6. Add the toppings of our choice – chopped apples, pitted cherries, chopped pecans, currants, or raisins are all great options.
