| My First Vegan From-Scratch Dinner Attempt I am excited about the dinner that I am cooking tonight for my family (& my Dad and Stepmom, who are not vegetarians)! It's a recipe from the "Peas & Thank You" cookbook - 'almost from scratch lasagna'. Has anyone already tried this recipe? If so, how did everything turn out? | Losing weight the vegan way - How? I used to struggle with going dairy-free as I love milk and cheese. What helped me is the support system I have at home starting with my hubby. We had a talk as a family, discussed with our teens and outlining the reason why there's gonna be a big change in our meals and the benefits we will all enjoy if we forgo dairy products. The kids were supportive. Nothing more excites them than going through recipes after recipes as a family each Sunday to prepare the meals for the entire week ahead. My daughter just got hold of Dieting the Santa Barbara Way book and the recipes are perfect for vegetarian and vegans. | Vitamix After years of debating ..... I finally took the plunge and purchased (ordered) a Vitamix blender. (Yes, I know it's not "just a blender"). The one I purchased is not at the top of their line (as it was not the most expensive one they sell). The one I purchased is the Vitamix Creations 48oz. 15-in-1, 2-Speed Blender with Dry Container. It should be arriving next week and I feel like a new mother. (What in the WORLD do I do with this precious little (expensive) bundle?) So having blurbed out all that.....I was just wondering if any of you would be able to "validate" my purchase by telling me what you love about your Vitamix, why you purchased one, what you use yours for etc.? And since I'm looking for honesty, anyone that has a not so rosy view or experience with one, please feel free to leave your comments as well. WHAT HAVE I GOTTEN MYSELF INTO?? | Veganism while in college? I am an entering freshman in college, and have been working on making the transition into veganism over this summer. However, the university I will be attending only allows a microwave, blender, and a mini-fridge in the dorm rooms. (That means no crock pot, George Foreman grill, hot plate, etc.) As a result, I am concerned about what to eat while there. Does anyone have suggestions on what to buy/stock up on food-wise, as well as simple recipes that could be made with minimal appliances and limited time? Thanks in advance. | Soy/vegetarian jerky and snacks? Yummmmm, I just found a delicious new meat jerky alternative! It's soy jerky...perfect for vegetarians like me! It comes in 7 different flavors. | top ten vegan recipe blogs. Hi fellow vegan home cooks! There are a lot of vegan recipes out there on the net but if you just randomly Google for a vegan recipe you get a zillion of results and many of these recipes are just not that good. If you stick with recipes from websites or blogs from good vegan chefs (professional ones or the better vegan home cooks) you can be pretty sure that all the vegan recipes rock like a clock. What is your favorite website or blog from a vegan cook that has vegan recipes?? | Green Smoothies Any recipes to share? I've only been doing smoothies for about 2 weeks now but I've found I really like it. It's a great way to eat your veggies and fruits and easy, too. No chewing required! Here's a very simple one I started with: 2 cups raw spinach leaves (whole) 4-6 strawberries (tops off) Half a banana A little bit of water Blend the fruits & the water first and then add the spinach leaves a small handful at a time, blending in between until smooth. Then drink. :) You can make a smoothie as simple or complex as you want. My current blender is pretty tiny though so I keep the ingredients pretty basic with a 3 fruit/​veg combo. | things to do with leftovers finding uses for leftovers makes cooking for less people more practical... For ratatoullie i take a bagette and put the sauce on top topped with some vegan mozeralla or gouda to make a low fat, non saturated easy pizza. That saves a lot of money going to dominoes. For paella, rissoto, bulgar wheat other rice dishes or cous cous can be made into suppli or archini. as follows. take the rice or other grains dry but do not brown in oven or leave in fridge overnight. lay breadcrumbs out on a surface. divide the rice into balls that fit easily into your hands open the ball with your thumb take a quarter thumbful of vegan cheese and place in middle refix over the ball and roll in the breadcrumbs. repeat. take balls to deep fat fryer and deep fry for roughly two mins or until bread crumbs are golden. The left overs of main meals can be used at stage 3 of cooking soup,see entry in starting off and hints, instead of vegtables. Try addingsome pre-soaked barley or rice or noodles for flavour thickening and making a meal of it; if you use a lot of carbs like rice or grains you need to add more water or stock liquid at stage 4. | Meat Subsitution advice Hi, I have a recipe for curried chicken with cashew nuts that I want to change to be a vegetarian recipe, but I don't cook very often and feel lost without a proper recipe to follow :) The original recipe builds the curry base and then cooks the chicken in it for 45-50 minutes. I am thinking of subsituting the chicken either with tofu or with potato. If I choose tofu, how long should I cook it for? I have read that it should be popped in at the last minute, but then I am worried that it won't pick up the flavours of the curry. If I use potato, can I use the same cooking time as chicken? | Home Made Hemp Milk I've been making hemp milk for quite some time now and here is the recipe for it. Note: you will need a very powerful blender such as a Vita-Mix for this recipe. Also a large bowl and milk filter bags. You can get the bags online if you do a search for them. 1 cup hulled hemp seeds 7 cups of filtered water vanilla extract raw honey or sweetener to taste pinch of sea salt Fill your blender with the 7 cups of water. Add the hemp seed, vanilla and sweetener. Blend until all the seeds are broken up. When that is done let it sit for a few minutes, then blend again. Filter through two milk bags into a large bowl. Put into a glass container. The container should have a tight fitting lid because you have to shake the milk up before using. | Things that replace meat Vague, I know, but the problem that I had a lot over the summer whilst travelling, cooking with non-veggies etc. was trying to decide what to replace the meat option in their meal with. Often I'd end up with pasta, but then if they're having potatoes and veg that doesn't really work. I'm not a big fan of tofu, seitan, 'fake meats' etc., but it would be nice to be able to have the same side dishes as everyone else and still have a balanced meal. Thoughts? | flexible meals Hi everyone! Looking for some suggestions... I am vegan, but my husband is a full-on meat eater... So far, our agreement has been that we'll have our daughter try a bit of what each of us eats and as she matures, we'll each explain our personal choices and let her decide for herself when she's old enough to do so. I tend to do the bulk of our cooking and I really do prefer us to eat as a family, so I've got a few staple meals that I'm able to make for all of us with just a few tweaks (i.e., tacos, spaghetti, pizza, burgers...) but I'm looking to expand our menu options and I'd really love some feedback. Do you all have any meal suggestions that are easily adaptable for different diets? Occasionally I'll also adapt by simply making common side dishes and two proteins... my husband will have a grilled chicken breast with our rice and veggies, while I have some tofu or something, get it? | Sweet Potato and Quinoa Salad This sweet potato quinoa salad recipe is high in protein, low in fat, and high in spicy and sweet flavor! Whole grain quinoa cooks quicker than most grains and is an excellent source of protein with about 11 grams of protein per cup of cooked quinoa. INGREDIENTS: * 1 cup quinoa, uncooked * 2 cups vegetable broth * 1 sweet potato, pre-baked and diced * 1 red bell pepper, diced * 2 tbsp olive oil * 1/​4 tsp cayenne pepper * 2 tbsp lemon juice * salt and pepper to taste PREPARATION: Simmer the quinoa in the vegetable broth about 10 to 15 minutes, or until water is gone and quinoa is light and fluffy when stirred. Remove from heat and allow to cool. Toss together the quinoa, sweet potato and bell pepper in a large bowl. In a separate small bowl, whisk together the lemon juice, olive oil and cayenne pepper. | help for fussy 5 year old eater ok, so this is prob going to be a long post in order to get in all the details. I'm after help to know what are other sources of proteen. I am not a vegitarian myself, so although I know there are nonmeat sources of proteen, I don't know what they are. I have a fussy 5 year old who is currently suffering from very soft poo, or diarea. We are wondering if this could be down to lack of proteen since he won't eat meat other than chicken nuggets or sausages, and I won't let him eat much of these as they are junk food. I have decided that the easiest option is to go down the vegitarian path with him, but don't know what the vegitarian sources of proteen are. Currently the things as well as meat that he won't eat are: eggs, baked beans, carrotts, cooked cheese, cheese sauce, soya mince, cooked mushrooms, anything that is in a pie. Please can anybody help by: A) explaining to me in a simple way what the vegitarian sources of proteen are B) suggesting some simple recipies that include these sources of proteen that might appeal to this fussy eater. | Homemade Soymilk I just wanted to let everyone know that I found a really easy way to make soymilk at home without one of those expensive automatic machines. I got what is called a "nut milk bag" for $5 at the health food store, soak the beans all day (or night), blend them with water (amount of beans X 2), and then pour it into nut milk bag. All you have to do is squeeze the soymilk right out of it, and the beans stay in the bag. Takes me about 5 minutes, and simple as pie.
