| Oranges and Lemons I have been given a HUGE bag of Oranges and Lemons and I'm wondering what to do with them all. Besides slicing 'em and freezing 'em or putting them in gin and tonic I'm at a loss. Any suggestions greatly appreciated. I was thinking about Lemon curd but I don't eat eggs. | Veg-friendly chefs on Youtube? Hello people, I`m new here but would like to try out new recipes and learn. So, my question to you is if you would recommend any youtube channels and people that cook healthy, fast and not so expensive dishes? So far I`m following Jamie Oliver, Hilah Cooking and Laura in the Kitchen. Any other suggestions I should check out and try? P.S That's an idea to feature on the HappyCow channel. | Cheap Vegetarian Recipes for College I am a vegetarian (and somewhat, but not entirely vegan) and will be attending college this fall. I am looking for some recipes that are inexpensive and require little cookware. (I will be bringing a couple knives, a mixing bowl, two pots, a frying pan, and a colander to school along with basic dining ware.) My cafeteria plan will allow me two meals a day, and the third I would like to be vegetarian/vegan and prepared by me. I'm just looking for some basic recipes that don't require too much preparation or too expensive of ingredients. I've been looking through recipes online and am also ordering the book "Vegan with a Vengeance," but I'm still worried that I will not be able to afford the majority of recipes I am finding. | vegetarian tuna ? Hello All, My b-friend went veggie (lacto ovo) to join me almost two years ago. He says he doesn't really miss meat; but does miss his tuna salad sandwiches. I was happy to see that the featured food company, May Wah, has a veggie substitute; but sad to find out they won't deliver to canada. Does anyone have any suggestions? Thank you in advance. | Cinnamon Rolls These are easy to make cinnamon rolls that are modified from a non-veg recipe Double or triple the recipe because it doesn't make many, but here is the original measurements: preheat oven: 425 1C flour 2T sugar 1/​2t baking powder 1/​2t salt 1/​4C margarine 1/​3C soy milk filling: sugar cinnamon chopped nuts/​raisins/​chocolate chips Sift together dry ingredients and add soy milk and 3T margarine (keep the rest for brushing on the dough) Roll out the dough until it's as thin as you want it, not too thin though or it'll get holes in it. You may need to add a little more flour to tone down stickiness. Brush on remaining margarine and sprinkle on sugar, cinnamon, and nuts, raisins, or chocolate chips if you want. Roll up the dough and then slice it. Place the cinnamon rolls on lightly greased cookie sheets and bake for 8-11 minutes. These won't come out as huge sticky buns. | Vegan Panini I found a few articles online, but I wonder about any of your experiences. We were just gifted a new Panini grill. I have never had one so at first I thought of just returning it for credit, but the more I think of possibilities, I think it could be fun. Only, has anyone here experienced vegan panini before? Details!!! I've read enough to where I think I could do something fun, but as I've never had one, I wonder if my vegan version would be worthy of keeping such an instrument. | Christmas menu recipe ideas I am having a small Xmas dinner prior to the big day and am in need interesting menu ideas. Since I am eastern european I thought it would be a nice change to offer a traditional american/canadian xmas meal. Only problem is, what do I serve? I need ideas for a menu that would be interesting and appealing to the senses. I am not too sure about bird substitutes and I think some of the diners would not appreciate an imitation turkey, so I need something different... if anybody has any ideas please offer them to the forum. | what do you do for thanksgiving? i've been a vegitarian since i was was 9, i am now 18. every year when thanksgiving comes around i look every where for some fake turkey and have no luck. i usally end up eating veggie chicken nuggets, but i would really like to have something with the turkey taste. in suggestions? | Condensed milk Hi all! Does anyone know of a vegan alternative to condensed milk? Way back when I used to make the best fudge but it has condensed milk in it. | Tips for Making Food While Travelling? Hello- I am three months into a new vegetarian life. I would love to go completely vegan, but my job makes it very difficult to do so. I work in a male dominated industry where I often have meals with my colleagues and sometimes it feels like just being female is a liability, let alone stating I am a vegetarian. I will be travelling to Texas with work for an entire week. I will be with colleagues the entire time. | In Search of A Beginner's Vegan Cookbook I'm slowly transitioning, but I'm looking for a vegan cookbook geared towards someone who has never cooked vegan dishes before. A lot of the ingredients in some of the books, I've never even heard of, and I have no idea how to properly cook it... I just want some easy meals that taste great. Once I get the hang out it, I'd like more complex ones. I also enjoy seeing photos in cookbooks which I haven't see much of in any of the ones I've seen. | Sprouting Can anyone tell me how to safely sprout seed or legumes? I prefer overnight mixes. Please dumb it down as much as you can because I honestly don't know anything about sprouting. I've tried before and ended up having to throw everything away because of sour smells (this can't be safe to eat). I've been buying sprouts for a long time but have recently read that there is a lot of bacteria in store-bought sprouts. | Sprouting and cooking Each day as part of my lunch I have 40g of mixed beans and seeds. The current batch were cooked and frozen into small containers. I would like to increase the nutritional content of the food by sprouting. These are the beans etc I cook: red kidney beans, green lentils, brown lentils, black eye beans, black beans, red cow beans, fennygreek, sunflower seeds. This is what I propose to do: Soak everything other than fennygreek for at least 12 hours. Fennygreek smells if it does not germinate. Drain and regularly hydrate, and leave to germinate until most of the beans are sprouting slightly. (Ignore kidney beans as they probably will not sprout). Cover with water and hard boil for 15m and simmer for 45. Drain and freeze into small containers. Is the above sensible? Robin Post Date: 03/30/09, Replies: 6 | ||

| How to make tahini PLEASE, anyone know how to make tahini? I've been searching for a while. I tried to make it in my juicer, which I can make nut butters with an attachment. It only flung sesame seeds all about my kitchen. I can't imagine it being too difficult or needing too much technology since it is a basic in 3rd world countries. I see no reason for it to cost $10/lb at my local HF store. I start muttering in the aisle every time I see it (hummus too for that matter) and nearly cause a scene. I just want it to be around the $2-3 range when I used it back in the day. It isn't as though there is a sesame shortage, is there? Also, please keep this thread for MAKING tahini; not tahini sauce, or hummus or baba g, or tell me to sub nut butters (thanks though). I want to know how to make tahini from scratch, it is the topic. | Barbecued Seitan Ribz 1 cup vital wheat gluten 2 teaspoons smoked Spanish paprika 2 tablespoons nutritional yeast 2 teaspoons onion powder 1 teaspoon garlic powder 3/​4 cup water 2 tablespoons tahini or other nut butter 1 teaspoon Liquid Smoke 1 tablespoon soy sauce about 1 cup of your favorite barbecue sauce Preheat the oven to 350 and lightly spray an 8x8 baking dish with canola oil. Mix the first 5 ingredients together in a large bowl. Mix the water with the nut butter, Liquid Smoke, and soy sauce and add it to the dry ingredients. Stir to mix well and then knead lightly in the bowl for a couple of minutes. Put the dough into the baking dish and flatten it so that it evenly fills the pan. Take a sharp knife and cut it into 8 strips; then turn the pan and cut those strips in half to form 16 pieces. Put it in the oven and bake for 25 minutes. While it's cooking prepare your grill. Remove it from the oven and carefully re-cut each strip, going over each cut to make sure that the ribz will pull apart easily later. Generously brush the top with barbecue sauce. Take it to the grill and invert the whole baking dish onto the grill (or use a large spatula to lift the seitan out, placing it sauce-side down on the grill). Brush the top of the seitan with more sauce. Watch it closely to make sure that it doesn't burn. When sufficiently brown on one side, turn over and cook the other side, adding more sauce, if necessary. When done, remove to a platter and cut or pull apart the individual ribs to serve. | Pulse expert needed for my black beans I have been making black beans from cans for some time now and they usually turn out extremely well. I slow cook them for 5-6 hours with sauted onion, garlic, cumin and a little cayenne. By this method they have an incredibly rich, addictive and satisfying taste. Recently I tried making them from soaked dried beans but they didn't turn out nearly as well. I cooked them for much longer period - until they were mush - but they never quite lost that slightly bitter, pasty taste of undercooked beans. Are there any pulse experts who can help?
