To make your hummus creamier, you can remove the skins. So I want to ask you, is it worth making the hummus creamier if you lose all that incredible fiber?

I'm just wondering because I'm making a batch now from the book

Check it out, it has some pretty good snack recipes that I want to try.

    I actually read an article in Vegetarian Times about 5 years ago that talks about making hummus creamier by incorporating some of the cooking liquid from the chickpeas when you puree it... it actually works really well... and is much less of a pain than peeling chickpeas...

    Just make sure you throw out the original soaking water to prevent gas! But use the cooking water, yes.
