I was wondering if anyone could give me advice on how to get the meat like texture of white meat chicken in my seitan. I've made seitan and it comes out smooth without much of a grain. When I've eatan chicken seitan at restaurants the grain was so perfect you could not tell you weren't eating real meat other than there were no bones.
I would appreciate any tips or help on how to create that texture.
