Vegan Pumpkin Soup "Recipe" -by a guy that doesn't really follow recipes The following steps will be slightly vague, but follow your heart and your gut and at least some of these directions, and you're bound to have a very decent soup/stew. Good luck, be safe and have fun out there!!! 1. Buy pumpkins or other seasonal squash. 2. Slice the tops off. 3. Scoop the seeds and other goo and save seeds for a nice protein snack. The goo is full of vitamins, feel free to rub it all over your face before your next shower for extra beauty/radiance. 4. Slice the pumpkins/squash into halves or quarters, doesn't make a big difference, smother with olive oil, salt and pepper, and roast at 450ish Fahrenheit until a fork slides through nicely. It's going to have to bake for 20-40 minutes, I can't really remember. 5. Chop onion and garlic (be generous with this stuff). 6. Heat olive oil in a soup pot, throw in the onion, wait a minute or 3 and add the garlic. 7. Add a bunch of spices (pepper, salt, turmeric, garam masala, curry powder, cinnamon, red pepper flakes, chili powder, cumin, whatever you like). 8. By now your pumpkin might be ready for action, if the fork slides in easily, remove from oven, and turn off the oven unless you're planning to roast the seeds right away. 9. If your squash has edible skin, skip this step, but if you're working with pumpkin use a spoon to remove pumpkin flesh from the skin (don't burn yourself). 10. Throw pumpkin/squash flesh into the soup pot with the spices/onions/garlic. Chuck a few diced tomatoes in if you happen to have about 400 in your garden like me. 11. Cover the stuff with some water, or veg broth/bouillon. 12. Cook at medium heat, I guess. 13. Once all the stuff has had a chance to boil together for awhile, reduce to a simmer. 14. Pour in some coconut milk for creaminess, maybe some spinach or anything you'd like to add that cooks really quickly. 15. Taste it, add some more spices as needed. 16. If you like a nice smooth soup, this is when you'll immerse your immersion blender in the mix and blend. Otherwise your meal will have the consistency of a stew, which is fine. Last night, for the first time, I added a few cups of previously-cooked lentils to the mix before blending for some extra protein. It was a good move, I'm gonna do it again. 17. Scoop the soup into a bowl. 18. If your pumpkin/squash/gourd seeds are already roasted, sprinkle a few on top for style points. 19. Enjoy your seasonal hearty meal. Raw Mango Guramba Recipe The mixture of tangy and sweet flavors of this mango guramba is what makes people crave it for. You can now easily prepare this mango pulp enriched murabba at home. Ingredients: ● Raw mangoes/ Kari 2 cups ● Sugar 1 cup or to taste ● Oil 1 tbsp ● Carom seeds/ ajwain a fat pinch ● Fennel seeds/ saunf 1/4 tsp ● Cumin seeds/ zeera pinch ● Nigella/ kalonji 1/4 tsp ● Red mustard/ rai 1/4 tsp ● Red chili flakes 1/4 tsp ● Red chili powder 1/4 tsp ● Salt to taste ● Almond and raisins as needed Directions: ● Take the raw mangoes and deseed them after peeling the skin ● Then cut them into small cubes and soak in water for about an hour ● Take a pan and fry all the seed in them, let them crackle ● Next, add the raw mango cubes along with sugar and salt ● Cover the lid and simmer on low heat until the mango cubes become tender ● Now add the chili flakes and the chili powder and cook the mixture until the water dries out ● You can also keep the mixture’s consistency like a jam or watery, it’s up to you ● Lastly, add the almonds and raisins as the murraba is ready ● Store it in an airtight jar after cooling to enjoy later with parathas or rice For more recipes, do visit: Cooking Crave! Macaroni Fail Hello all, I'm struggling with finding the best Vegan Sub. for Macaroni and Cheese any good recipes? It is my favorite food to eat. I use to make a Baked White Cheddar Macaroni and Cheese Dish. Its hard enough giving up dairy. Giving up my favorite food is even harder. What are the best tasting Vegan Cheeses? recipes for diabetics Greetings, I'm recently diagnosed type 2 diabetic. I've been vegetarian since forever. Now I'm struggling to take care of my glycemic index chart: since I can only eat food with low glycemic index. Does anyone have recipes that are vegetarian and also diabetic-friendly? Vegan Mozzarella Cheese What are the best vegan mozzarella cheeses? I tried follow your heart mozzarella shreds to eat with pupusas 2 times and it was disgusting. The pupusa easily breaks apart too, and the cheese is also messy so I had to keep cleaning my hands. I also ate the cheese as a quesadilla and it was still disgusting. I'm vegetarian. My parents and sibling also didn't like it. I won't be buying it again. What brands have the best mozzarella cheese that either come in shreds or blocks? Btw, I am aware they sell frozen vegan pupusas, but I refuse to eat it for several reasons. Pupusas are my country's national dish. These frozen vegan pupusas are so small. I don't even think it comes with coleslaw or the sauce. I eat pupusas with both because that's what a pupusa is meant to be eaten like and that's how I like it. I don't eat wannabe pupusas. Favorite Ways to Prepare a Tofurky Roast! I'm a fan of Tofurky roasts and when I first started making them, I followed the basting recipe on the side panel. A holiday or two later, I started adding a splash or two of dry red wine to the original recipe, and I used to have a problem with making extra baste because I liked to roast vegetables with my Tofurky and didn't want them to burn - now, this kept my roasted veggies perfect and kept the Tofurky nice and moist for leftovers....but what I later learned is that using exactly the prescribed amount of baste and roasting the veggies separately gives your Tofurky roast an excellent crispy "skin" (creepy I know but) which improves the appearance to omnis and may serve to satisfy a craving for crispy bits without having to eat a dead animal! My new way I discovered is similar to the original recipe, I use 2-3 Tbsp of olive oil, then about 1 Tbsp of Bragg's Liquid Aminos instead of soy sauce (it's just as flavorful but slightly less salty and adds a bit of nutrition) that I add several generous splashes of balsamic vinegar and then mix it well. I then roll the Tofurky in the baste, before putting it into an oiled pan and adding half the baste on top. Before wrapping and baking, I sprinkle herbs de provence on the roast instead of sage. I was extremely pleased with the flavor the balsamic vinegar gave the Tofurky. Also, I always serve mine with gravy. I like to make homemade gravy, but I also found a way to "liven up" Pacific Vegan Mushroom Gravy. Some of you may like it as is, but I find it a bit bland. I sauteed a quarter of an onion in olive oil, sprayed about a teaspoon of Braggs onto the onion, then added a splash of balsamic, before pouring the Pacific gravy on top and stirring it all together to simmer until hot. Then I stirred in about a spoonful of nooch and a sprinkling of herbs de provence before serving. What's your favorite way to make a vegan holiday roast? Post Date: 11/23/17, Replies: 1 11/23/17 1
Newly turned vegan seeking advice Hi Guys, I've recently turned vegan after living as a vegetarian for many years. It's going really well for me so far; i'm finding it super easy as i just think about the greater good! The hardest part is dealing with constantly repeating myself to the same old questions people like to give you when they find out you're vegan. I am just seeking some advice though- i am finding that some days i just can't satisfy myself. I can not surpass the feeling of hunger no matter how much i eat! has anyone else experienced this/ where am i going wrong? So annoying Also! If anyone would like to share some recipes with me i'd be super thankful for that :D Always trying new things! The internet likes to tell you a recipe they are sharing is vegan but they lie. Not eating enough? I'm a newish vegetarian and I find myself so hungry all the time. I've been incorporating veggies high in protein and fiber as often as possible,but it seems like it's not enough! Soy free options? Hi everyone, I'm new here, and trying to come up with some vegan or vegetarian recipes that do not include soy, as I've been instructed by my doctor to stop eating soy products. I guess I have been in a convenience rut, and didn't realize how many vegan convenience foods I was relying on, and they are almost 100% soy-based. Vegan Newbie: Pancake Help! I was so happy to discover that my favorite packaged pancake mix, Bob's Red Mill Gluten Free Pancake Mix, was vegan in itself! So instead of using the milk, eggs, and butter, I used almond milk, aquafaba, and earth balance soy free. The mix looked great, so I fried up in coconut oil as usual, but they stuck to the pan like cement!!!!! I couldn't even get my silicone spatula under them. Am I missing something? vegan chocolate cake and frosting disaster Hello!! I am trying to make a vegan chocolate cake and vegan chocolate frosting with no success! I have tried earth balance for butter replacement, the one with soy (yellow box) and without soy (red box). Cakes taste kid of salty/oily/weird/fishy but if I add a lot of cocoa powder and pure vanilla extract, they can be edible... kind of. The major problem I have is with frosting! There is no way earth balance can decently substitute butter. Frosting tastes bad, real bad. I experimented again tonight with both cake and frosting. Cake as usual is oily and salty, frosting is horrible! I refrigerated for a couple of hours and it now even tastes a bit bitter. Definitely not something to serve to any guest!! I made the frosting with half shortening and half earth balance stick, added a lot of powdered sugar, much more than the recipe called for, a lot of pure vanilla extract and adjusted consistency with coconut milk. I need help!!! what do you normally use for frosting? Do you know of another brand I can try? Am I doing anything wrong? I cannot use coconut spread as I live in Florida and it will melt before my eyes, here it doesn't keep in solid form at room temperature. Any help is much appreciated!! Thank you!! Lovely lemon drink This drink is my mum's recipe. It is a lovely hot drink to have at a special occasion or in the winter and it has also cured me of a bad cold many a time. Im not that good when it comes to measurements of ingredients (I usually just throw random quantities in and hope for the best) so I won't be putting all the measurements here just some of them. Instructions: 1 Get a smallish or medium pot and boil water in it. Then bring down to just below a simmer. 2 Add 1 to 2 lemons for a small pot or 2 to 4 lemons for a medium pot. Cut each lemon in half before throwing it in. 3 Add 4 spoonfuls of sugar and honey (or vegan honey substitute). Add more honey or honey substitute than sugar. 4 Add ginger, cinnamon and cloves. Add as much or as little as you want, it's a matter of preference and how spicy you want it to be. 5 Stir and cook on a low to medium heat for awhile. 6 Pour the drink into a large round mug and enjoy! :) Post Date: 08/15/17, Replies: 0 08/15/17 0
How to make tahini PLEASE, anyone know how to make tahini? I've been searching for a while. I tried to make it in my juicer, which I can make nut butters with an attachment. It only flung sesame seeds all about my kitchen. I can't imagine it being too difficult or needing too much technology since it is a basic in 3rd world countries. I see no reason for it to cost $10/lb at my local HF store. I start muttering in the aisle every time I see it (hummus too for that matter) and nearly cause a scene. I just want it to be around the $2-3 range when I used it back in the day. It isn't as though there is a sesame shortage, is there? Also, please keep this thread for MAKING tahini; not tahini sauce, or hummus or baba g, or tell me to sub nut butters (thanks though). I want to know how to make tahini from scratch, it is the topic.
