This was long amongst Sydney's most celebrated pizza. They put their reputation on the line in order to live their new vegan convictions. The result: even more celebrated pizza. Rather than simply use commonly available vegan substitutes for their existing pizzas they have created new masterpieces out of unlikely, traditional ingredients. So many chefs like to think of themselves as something special, something revolutionary. Meh. *This* is revolutionary. If you want to see how vegan ingenuity can redefine traditional favourites then this is your stop. If you want to see how vegan products can be top of their class then come here. Gigi is a pioneer in the future of food.
