- Really good food!!!
In Las Vegas, NM there aren't many options for vegetarian/vegans. The Plaza Hotel restaurant had a decent amount of options for us. I had the blue corn enchiladas (note: ask them to leave the beans off as they have bacon in them). My mom had a kale salad and a vegetarian green chili stew and my daughter had the New Mexico vegetarian pasta. We told our waiter we were going to share all our meals so he brought out extra plates. Come to find out our waiter Jorge changed to be a vegan last year! He's the one that told me there was bacon in the beans. If you find yourself in Las Vegas, NM check this restaurant out. You won't be disappointed
