Waldsee has a really good reputation in Freiburg, it is more gourmet food than anythingelse. I only went there because friends of mine with children were staying on the campsite next to the restaurant. As a vegan i did not expect much, if anything... it is traditional seasonal food, so meat orientated... but to my surprise the waitress knew what vegan was and was positive the chef could do something for me. I got a very nice plate including asparagus... it was a few months ago, i just remembered being impressed by the service and the fact i got something gourmet looking rather than the usual sad looking mixed veg. Do go! Not cheap but worth the experience.
