Pieology is a newer chain of pizza restaurants. The premise is like Chipotle. You start with a choice of crust (white, whole wheat, or Gluten Free). The white and whole wheat are vegan, unsure of GF. The crust is about 12" round, perfect for 1. Next up you pick your sauce, we got 1 with red sauce and 1 with BBQ, both begin with a brushing of olive oil. We opted to try no cheese on one and added Daiya vegan mozz to the other. I remember when Pieology first opened they didn't have that option, so they must be open to feedback, and I'm glad they added it, maybe they will be open to adding Field Roast sausage or Tofurkey pepperoni in the future. It's a bummer that it is $2 to add Daiya, but maybe over time that could change. Next up you get to pick your veggies, and they are unlimited and none of them cost any upgrade charges. We both added about 4-5 toppings. The red sauce pie we left cheeseless and the sauce didn't stand out, almost like there was no seasoning to it. The pie was still good and satisfying. The BBQ pie we added the Daiya to and it was really good, though by the end the sauce was a bit cloying. At about $8 per pizza it's a nice option to have, especially when you are in the suburbs and just waiting for traffic to die down a little.
