Finally checked out Vegan Commissary over the weekend. It is a cozy brunch spot and I can't imagine a better brunch than a plate of their enormous fluffy pancakes and a side of tofu bacon. I have had plenty of tempeh bacon in my vegan life, but the tofu bacon was a great variation. Super flavorful, sliced thin and with a little toughness to it- wish I knew how to make tofu taste like that! The other stand-out item was the scrapple. It was pleasantly crispy on the outside with a soft, well salt-and-peppered mushroom creaminess in the middle. Some of the other things we tried were not as spectacular. The tofu scramble was bland and full of green peppers (not a fan)- came with a fried potato mash that my mom liked a lot but I didn't care for), and the French toast was a bit mushy on the inside. I would definitely go back to try out some more of their brunch options, but if you go for the first time, definitely get the pancakes and tofu bacon!
