- Veg Mexican in rural Kansas
Driving cross country we decided to stop in Salina, KS off of I-70 for the night. We weren't too optimistic about finding vegan options. Then we found Gutierrez restaurant. Right across from our hotel they actually had a vegetarian menu. Authentic Mexican and family owned, the food did not disappoint. We got a huge plate of veggies with tortillas and their kick-[censored] salsa and guacamole. If you find yourself in the middle of Kansas, this is definitely a good place to eat.
