For vegetarian, try the beetroot filling, with various cheesed on top. For vegan, ask on space. I think, green veggies, hummus and nuts / dukkah should do. Though personally I did not like dukkah very much. Attention! The potatoes are huuuuge, my advice: take 1/2 potato even if you are very very hungry.
