- Mex without the Tex -- UPDATE -- seems this place has NO vegan or even vegetarian options. :-(
Guajillo's was introduced to us by some of the most dedicated vegans in San Antonio! They raved about this place and we soon knew why. Not many veggie dishes listed on the menu, however there's ONE dish my husband and I love so much that for awhile, we were there every Saturday, happily chowing it down for lunch. Our favorite dish is Mole Verde con Calabaza / Green Mole with Zucchini! It comes with beans and rice... NO animal products or broth used in preparation of either one. All seasoning in this restaurant is done with different peppers is what they've proudly told us. Peppers are the main ingredient for all flavors. According to my vegan chef hubs, they have certainly made it a fine art! He describes the dishes he's tasted as rich, flavorful, well-balanced and unique. (He's pretty particular and tuned-in on foodie topics.) Me, I just LOVE them, especially this Green Mole (made from roasted pumpkin seeds!) served over grilled zucchini. The friendly owner/manager(?) has told us that they are very willing to make other dishes vegan if patrons simply ask. He, himself, is looking to eat more vegan. Chips are fresh and super crisp and the salsa is spicy with lots of flavor, so very different from any other we've tasted. It's a comfortable, down-to-earth kind of place. Good service and consistently tasty food. So affordable. We actually share one serving of this green mole dish. When we order it to split, they bring it on separate plates with generous portions of beans and rice. Plenty for us to eat!
