This is actually not a Chinese restaurant, this is a Taiwanese restaurant ; you can go on YouTube they have a lot of interview and google their company, their first store starts in Taiwan and it was a family business, the owner is very strict with their SOP standard operation procedures, they train their worker like Japanese spirit which is strict and discipline ; they are famous with their glass transparent kitchen which customers can see every single workers working in their kitchen. I watched their whole documentary, it was very impressive. Taiwan used to be colonized by japan. Can give a look of their documentary very inspiring
