I finally found some canned jackfruit at a\u00a0local indian market. I\u2019m not really sure if restaurants use canned jackfruit or fresh but I plan on asking next time I eat at Sage. Even my husband agreed the texture was a lot like shredded chicken and the flavor was delicious as usual. I can\u2019t wait to try using jackfruit in other recipes. Next on my list are pulled \u201cpork\u201d sandwiches and teriyaki style tacos so make sure and check back for those recipes.<\/p>\n<p><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/04\/jackfruit-tacos3.jpg\" ><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-8411 alignnone\" alt=\"Jackfruit Tacos\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/04\/jackfruit-tacos3.jpg\" width=\"480\" height=\"640\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/04\/jackfruit-tacos3.jpg 480w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/04\/jackfruit-tacos3-225x300.jpg 225w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p><strong>INGREDIENTS<\/strong><br \/>\n1 tablespoon olive oil<br \/>\n1 white onion<br \/>\n2 cloves garlic<br \/>\n2 cans of jackfruit<br \/>\n1 tablespoon ground cumin<br \/>\n1 tablespoon chili powder<br \/>\n1\/2 tablespoon paprika<br \/>\n1\/8 teaspoon red pepper<br \/>\n1 teaspoon salt<br \/>\n1\/4 vegetable broth or water<br \/>\n8 small corn tortillas<\/p>\n<p><strong>ADDITIONAL TOPPINGS<\/strong><br \/>\nCashew queso<br \/>\nGuacamole<br \/>\nVegan chili or black beans<br \/>\nPico de gallo<\/p>\n<p><strong>DIRECTIONS<\/strong><br \/>\n1. Saute onions and garlic with the olive oil in a skillet over medium heat until they start to brown on the edges.<\/p>\n<p>2. While the onions cook, rinse and drain the jackfruit. Cut the core off of the jackfruit chunks. Using two forks, shred the jackfruit meat, removing the seed pods.<\/p>\n<p>3. Add the shredded jackfruit and all the spices to the pan with the vegetable broth or water. You want enough liquid so that the spices are evenly distributed throughout the jackfruit and so it can simmer without burning but not so much that it turns into soup! Simmer for about 10-15 minutes.<\/p>\n<p>4. Heat the corn tortillas. I have a gas stove and I like to cook them directly over an open flame so that the edges will char a little bit. Be sure to use tongs for this so you don\u2019t burn your fingers! Alternatively, you can wrap them in a slightly dampened paper towel and heat them in the microwave for about 10 seconds. The dampness will help keep them from drying out and cracking.
