It is also THE perfect soup for this time of year. It\u2019s as comforting as wearing a Hello Kitty Snuggie while sitting in front of a crackling fire with your cat on your lap. This recipe will make 2 quarts. You can half this recipe if you don\u2019t want as much (but you do. trust me).<\/p>\n<p><strong>Butternut Squash Bisque with Toasted Pumpkin Seeds<\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/02\/Final-Shot-Butternut-Squash-Bisque-1024x679.jpg\" ><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7392\" alt=\"Creamy Butternut Squash Bisque \" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/02\/Final-Shot-Butternut-Squash-Bisque-1024x679.jpg\" width=\"553\" height=\"366\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/02\/Final-Shot-Butternut-Squash-Bisque-1024x679.jpg 1024w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/02\/Final-Shot-Butternut-Squash-Bisque-1024x679-300x199.jpg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2014\/02\/Final-Shot-Butternut-Squash-Bisque-1024x679-768x509.jpg 768w\" sizes=\"auto, (max-width: 553px) 100vw, 553px\" \/><\/a><\/p>\n<p><b>What You Need:\u00a0<\/b><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>6 garlic cloves, minced<\/li>\n<li>1 tablespoon ginger, peeled and grated<\/li>\n<li>1 heaping teaspoon turmeric root, peeled and grated<\/li>\n<li>1 yellow onion, diced<\/li>\n<li>1 cup carrot, chopped<\/li>\n<li>2 butternut squash, peeled, seeded and diced into pieces (about 10 cups)<\/li>\n<li>1 apple, peeled, cored and chopped<\/li>\n<li>4 cups veggie broth (use whichever is your fave)<\/li>\n<li>Salt and pepper to taste<b>\u00a0<\/b><\/li>\n<\/ul>\n<p><b>How To Do It:<\/b><\/p>\n<ul>\n<li>Heat olive oil and saute the garlic, ginger, turmeric, onion and carrot for 5 minutes.<\/li>\n<li>Add the squash, apple and broth and bring to a boil.<\/li>\n<li>Simmer for 25 minutes until all of the veggies are soft. Turn off heat and allow to cool for 15-20 minutes.<\/li>\n<li>Transfer soup into a blender in batches and blend until creamy and smooth. You will have t blend it in a few batches depending on the size of your blender.<\/li>\n<li>Pour blended soup back into pot (you will have to put it in another pot since you won\u2019t be able to blend it all in one go) and add salt and pepper to taste.<\/li>\n<li>Top with toasted pumpkin seeds when serving.<\/li>\n<\/ul>\n<p>To toast the pumpkin seeds, place them evenly in one layer in a heated cast iron skillet. Cook on low, turning occasionally for a few minutes, until the seeds are toasted but not burnt.
