I was inspired by a friend of mine to make cashew artichoke dip. I played around with it and came up with something just for you cowlings.<\/p>\n<p>The addition of\u00a0saut\u00e9ed\u00a0mushrooms gives this dip \/ spread a deep, rich flavor that even the pickest of eaters will like. This recipe is awesome as a straight up dip (think pita or crackers) or you can use it as a spread on a sandwich (see the recipe below), or you could get really fancy and use it as a pizza topping. However you decide to serve it, your peeps will be\u00a0impressed.<\/p>\n<h2><b id=\"docs-internal-guid-673ca125-75bb-3625-fa59-7f44a5c15acb\">Artichoke Mushroom Cashew Dip \/ Spread \u00a0<\/b><\/h2>\n<div id=\"attachment_4833\" style=\"width: 506px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2013\/05\/Cashew-Art-Heart-Pate.jpg\" ><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4833\" class=\" wp-image-4833 \" alt=\"This will make your mouth super happy. \" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2013\/05\/Cashew-Art-Heart-Pate-1024x679.jpg\" width=\"496\" height=\"329\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2013\/05\/Cashew-Art-Heart-Pate-1024x679.jpg 1024w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2013\/05\/Cashew-Art-Heart-Pate-300x199.jpg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2013\/05\/Cashew-Art-Heart-Pate-768x509.jpg 768w\" sizes=\"auto, (max-width: 496px) 100vw, 496px\" \/><\/a><p id=\"caption-attachment-4833\" class=\"wp-caption-text\">This will make your mouth super happy.<\/p><\/div>\n<p><em><strong>WHAT YOU NEED <\/strong><\/em><\/p>\n<p dir=\"ltr\">1 cup cashews<\/p>\n<p dir=\"ltr\">1 jar Artichoke hearts (6oz.), drained<\/p>\n<p dir=\"ltr\">1 teaspoon lemon juice<\/p>\n<p dir=\"ltr\">1\/2 cup packed fresh basil<\/p>\n<p dir=\"ltr\">1\/2 teaspoon salt<\/p>\n<p dir=\"ltr\">1\/2 teaspoon sugar<\/p>\n<p dir=\"ltr\">1 teaspoon olive oil<\/p>\n<p dir=\"ltr\">2 cups mushrooms, sliced<\/p>\n<p dir=\"ltr\">3 tablespoons vegan mayo<\/p>\n<p dir=\"ltr\"><em><strong>HOW TO DO IT\u00a0<\/strong><\/em><\/p>\n<ul>\n<li>\n<p dir=\"ltr\">Place the cashews in a bowl and soak them in enough water to cover them by an inch. Soak them for at least 1 hour (you can soak them up to 24 hours.
