This is a bit more work but if you have the time, I highly suggest trying it.<\/p><\/div>\n<p style=\"text-align: left;\">\u00a0Serves 2 &#8211; 4<\/p>\n<p dir=\"ltr\">Gluten free if using gluten free soy sauce<\/p>\n<p dir=\"ltr\">Nut free<\/p>\n<h2><b><b>WHAT YOU WILL NEED\u00a0<\/b><\/b><\/h2>\n<p dir=\"ltr\">1\/2 Tablespoon (7 ml) oil (1 Tablespoon or 14 ml if you don\u2019t have a non-stick pan)<\/p>\n<p dir=\"ltr\">2 cups (290 g) \u00a0firm tofu, rinsed, drained and cut into 1 inch cubes.<\/p>\n<p dir=\"ltr\">1 Tablespoon (10 g) fresh red chili, minced (take out seeds if you don&#8217;t want it spicy)<\/p>\n<p dir=\"ltr\">5 cloves garlic, minced<\/p>\n<p dir=\"ltr\">2 cups (145 g) Japanese Eggplant, cut into 1 inch rounds and then cut into quarters<\/p>\n<p dir=\"ltr\">1 cup (150 g) Red Bell Pepper, cut into 1 inch chunks<\/p>\n<p dir=\"ltr\">1 cup (25 g) Thai basil leaves<\/p>\n<p><strong>Sauce<\/strong><\/p>\n<p dir=\"ltr\">2 Tablespoons (30 ml) Soy sauce<\/p>\n<p dir=\"ltr\">2 teaspoons (10 g) Sugar<\/p>\n<p dir=\"ltr\">1 Tablespoon (15 ml) Sesame oil<\/p>\n<p dir=\"ltr\">2 Tablespoons (30 ml) water<\/p>\n<h2><b><b>HOW TO DO IT\u00a0<i><\/i><\/b><\/b><\/h2>\n<ul>\n<li>\n<p dir=\"ltr\">Make sauce by whisking all 4 sauce ingredients together. Set aside.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Heat oil on medium\/high in a large non-stick skillet.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add tofu and red chili and cook for 5 minutes.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add garlic and cook for another 2 minutes.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add eggplant, red peppers and basil and cook for an additional 3 minutes.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add sauce and stir to combine.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Cook for 2 more minutes, turn off heat and cover.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Covering the dish will allow the steam to make the eggplant a little softer.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">After 3 or 4 minutes, take off the lid and serve.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Garnish with fresh Thai basil and serve with brown or jasmine rice.<\/p>\n<p>&nbsp;<\/li>\n<\/ul>\n<p><b id=\"internal-source-marker_0.681921707931906\">Molly Patrick\u00a0<\/b>has worked in the vegan food realm since 2003.
