Most are confined to the same crowded, filthy, windowless sheds that factory-farmed &#8220;broiler&#8221; <a target=\"_blank\" href=\"http:\/\/www.peta.org\/issues\/animals-used-for-food\/chickens.aspx\"  rel=\"external nofollow\">chickens<\/a> are raised in. &#8220;Free range&#8221; simply refers to the fact that they aren&#8217;t in cages, not that they are necessarily roaming around on a bucolic farm like Martha Stewart&#8217;s.<\/p>\n<p>Obviously, we don&#8217;t all have spacious farms in the countryside like Martha, but the good news is that we don&#8217;t need them. Because <a target=\"_blank\" href=\"http:\/\/www.peta.org\/living\/vegetarian-living\/egg-replacements.aspx\"  rel=\"external nofollow\">avoiding factory-farmed eggs<\/a> is as easy as reaching for a bag of flaxseeds or a block of tofu.<\/p>\n<p>Tofu is great for custardy dishes like <a target=\"_blank\" href=\"http:\/\/www.peta.org\/living\/vegetarian-living\/recipes\/vegan-quiche.aspx\"  rel=\"external nofollow\">quiches<\/a>, <a target=\"_blank\" href=\"http:\/\/www.peta.org\/living\/vegetarian-living\/recipes\/coconut-pudding.aspx\"  rel=\"external nofollow\">puddings<\/a>, and <a target=\"_blank\" href=\"http:\/\/www.peta.org\/living\/vegetarian-living\/recipes\/chocolate-mousse.aspx\"  rel=\"external nofollow\">mousses<\/a>. To replace one egg in a recipe, pur\u00e9e 1\/4 cup of soft tofu. The egg replacer is touted as being cheaper, healthier, and less perishable than real eggs. When presented with a muffin made with real eggs and one made with Beyond Eggs, Gates reportedly was <a target=\"_blank\" href=\"http:\/\/www.businessweek.com\/articles\/2013-01-24\/venture-capital-sees-promise-in-lab-created-eco-foods\"  rel=\"external nofollow\">unable to distinguish between the two<\/a>.<\/p>\n<p>&#8220;To make these things that are cheaper, probably more healthy, less cruelty involved, less greenhouse gas emissions\u2014it&#8217;s quite a phenomenal thing,&#8221; Gates says.<\/p>\n<p>Next thing you know, we&#8217;ll be seeing recipes calling for Beyond Eggs in <i>Martha Stewart Living<\/i>.
