There is a chill in the air when I let the dogs out in the evenings. I am not quite ready to let the summer go, especially since we had a very poor one here in the UK. I long for a few more evening meals in the garden but the nature of things cannot be changed.<\/p>\n<p>Instead I am getting excited about the autumnal bounty of fruits, veggies and nuts. I am looking forward to warming and comforting meals, movie nights whilst cuddled up on the sofa and cups of tea warming my hands after a dog walk.<\/p>\n<p>A delicious soup is the ultimate comfort food, and the abundant autumnal produce is full of gorgeous deep flavors to warm up person\u2019s belly and soul. Perfect for a hug in bowl, err I mean soup.<\/p>\n<p><strong>SPICY BUTTERNUT SQUASH AND PEAR SOUP<\/strong><\/p>\n<p><em><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3992\" title=\"Butternut Squash and Pear Soup\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/09\/IMG_4524.jpg\" alt=\"\" width=\"250\" height=\"335\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/09\/IMG_4524.jpg 250w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/09\/IMG_4524-224x300.jpg 224w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/><\/em><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>ingredients<\/strong><br \/>\n1 large onion<br \/>\n2 ribs of celery<br \/>\n2 stalks of lemon grass<br \/>\n1\/2 inch piece of ginger<br \/>\n1 chilli pepper<br \/>\n2 cloves of garlic<br \/>\n1\/2 butternut squash<br \/>\n4 small pears (2 large ones)<br \/>\n4 cups of vegetable stock<\/p>\n<p><strong>method<\/strong><br \/>\nFirst chop the onion and celery. Make sure you peel the celery to remove the tough strings.<br \/>\nIn a large soup pot heat 1\/4 cup of water, add the onion and celery and cook till softened.<br \/>\nNext finely chop the lemon grass, chilli pepper (de-seeded if you wish) and garlic. Cook for another 2 minutes or till softened.<\/p>\n<p>Peel your butternut squash and chop into bite size chunks. Core and peal the pears and cut into quarters.<br \/>\nAdd pears and butternut squash to the soup pot.<br \/>\nPour in the vegetable stock and bring to a boil.
