{"id":3941,"date":"2012-08-30T14:59:49","date_gmt":"2012-08-30T21:59:49","guid":{"rendered":"http:\/\/www.happycow.net\/blog\/?p=3941"},"modified":"2013-01-25T14:49:19","modified_gmt":"2013-01-25T22:49:19","slug":"the-gluten-free-vegan","status":"publish","type":"post","link":"https:\/\/www.happycow.net\/blog\/the-gluten-free-vegan\/","title":{"rendered":"The Gluten-free Vegan"},"content":{"rendered":"<div style=\"margin-top: 0px; margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2751\" title=\"Pure Vegan\" alt=\"\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/12\/PureVegan600x180.jpg\" width=\"600\" height=\"180\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/12\/PureVegan600x180.jpg 600w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/12\/PureVegan600x180-300x90.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/strong><\/p>\n<p>Have you noticed a new gluten-free section at your local grocery store pop up in the last year or so?\u00a0 For those people suffering from Celiac disease this is a welcoming new trend but those people are only about 1% of the US population, so why do they get a special section when we have by far more people dealing with other diet related issues, like peanut and tree nut allergies (affecting 3.3 million Americans)?\u00a0 It\u2019s because there\u2019s a new diagnosis called gluten-sensitivity or gluten-intolerance as well as a few books lately that have gained a lot of popularity on the subject.\u00a0 According to the market research firm Mintel, Americans will spend an estimated $7 billion this year on foods labeled gluten-free but the best estimates are that more than half the consumers buying these products don\u2019t have any clear-cut reaction to gluten.\u00a0 So why are they buying it?\u00a0 Perhaps they think it will help them lose weight, make them feel better or because they mistakenly think they are sensitive to gluten.<\/p>\n<p><strong>What Is Gluten and Where Is It Found in Food Sources?<\/strong><\/p>\n<p>Gluten is a protein composite that appears in foods processed from wheat and related species including barley, rye and tritcale(a cross between wheat and rye).\u00a0 Depending on how much it\u2019s developed (or worked\/kneaded by the baker) this is what gives bread, pizza dough, bagels, etc. an elastic quality that also helps it rise and keep its shape as well as a chewy texture.<\/p>\n<p>Besides being found naturally in the above mentioned grains, gluten is also an additive in many processed foods either because they lack sufficient protein, the food in question needs a stabilizing agent or a longer shelf life is desired.\u00a0 The FDA is close to finalizing a standard defining which foods are gluten-free and how they will be labeled but in the meantime, it\u2019s up to the consumer to become an expert label reader but even this is pretty easy to decipher these days. The Food Allergen Labeling and Consumer Protection Act (FALCPA) mandates that if an ingredient contains protein from wheat then the word \u201cwheat\u201d must be included on the food label and applies to all foods regulated by the FDA.<\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3942\" title=\"Vegan_food_pyramid\" alt=\"\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/780px-Vegan_food_pyramid.png\" width=\"500\" height=\"269\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/780px-Vegan_food_pyramid.png 500w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/780px-Vegan_food_pyramid-300x161.png 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/strong><\/p>\n<p><strong>What is the difference between Celiac Disease and Gluten-Sensitivity?<\/strong><\/p>\n<p>Celiac disease is a (potentially fatal) autoimmune disorder triggered by eating gluten which causes an immune reaction and damage to the small intestine. This oftentimes leads to abdominal pain, bloating and intermittent diarrhea but in all there have been over 200 different symptoms reported, many of which are not related to the classic form of celiac. Those with the ailment don\u2019t absorb nutrients well and can suffer weight loss, extreme fatique, anemia, osteoporosis, infertility, skin rashes and joint pain.\u00a0 Undiagnosed and untreated, celiac disease quadruples the risk of death and yet at the same time the treatment regimen is much simpler than most diseases in that it is primarily managed through avoiding anything with gluten.\u00a0 There are two main tests utilized to diagnose celiac disease; a blood test to detect anti-gluten antibodies and a biopsy of the small intestine to look for lining erosion.\u00a0 However, if there is a lack of gluten in your system, few antibodies are released and the tests come back negative.\u00a0 The same goes for the biopsy; if you refrain from eating gluten for a few weeks the damage heals relatively quickly and may not be detected.<\/p>\n<p>Diagnosing gluten-sensitivity is by far more difficult to diagnose since there is yet to be a test to screen for it.\u00a0 A sensitivity to gluten brings about an inflammatory response to ingesting foods containing gluten. \u00a0Sufferers can have a wide variety of symptoms which include difficulty walking, slurred speech, depression, anxiety, anger control issues, chronic fatique, ADD\/ADHD, migraines, seizures, autism, neuropathy, memory and concentration problems, pain and mobility issues(similar to multiple sclerosis), exhaustion, infertility, repeated miscarriages or even classic symptoms of celiac.\u00a0 Obviously you can see the problem here.\u00a0 Any of these symptoms could lead a health practitioner to hundreds of different diagnoses and treatment plans. For this reason, gluten sensitivity or intolerance is usually diagnosed by chance.\u00a0 This usually occurs when the person who feels that he may be having a bad reaction to gluten, despite a negative test result, decides to go on a gluten-free diet.\u00a0 But it also relatively common for people to self-diagnose and begin the diet restriction regimen with no professional support.\u00a0 In some cases, the diet will produce life-changing improvement in a matter of weeks or even days.\u00a0 It is estimated that 16-18 million people are considered gluten-sensitive(or 6% of the U.S. population).<\/p>\n<p>Truly on the Rise of Just a Fad?<\/p>\n<p>Twenty years ago celiac disease was considered rare in the U.S. until a few scientists began exploring why it was less common here compared to Europe and other countries but much to their surprise they found that it wasn\u2019t less common; it was just underdiagnosed.\u00a0 Then a few months ago a research team led by the Mayo Clinic\u2019s Dr. Joseph Murray published a study in the American Journal\u00a0 of Gastroenterology.\u00a0 They looked at blood samples taken from Americans in the 1950\u2019s and compared them with samples taken from people today, and determined it wasn\u2019t just better diagnosing driving up the numbers.\u00a0 Today the estimated number of celiac disease sufferers is roughly 1%(or 2 million), making it four times more common than it was 50 years ago.<\/p>\n<p>Dr. Murray suggests that there may be more celiac and other gluten-related health issues today because we\u2019re simply eating more processed wheat products than in past decades. Not only is it in our breads but we also end up ingesting it from a lot of hidden sources such as bottled dressings and sauces, even if frozen foods.\u00a0 Dr. Allesio Fasano, pediatric gastroenterologist commented recently that today\u2019s genetically engineered wheat contains much more gluten than it did 50 years ago.\u00a0 In that time, the amount of gluten in wheat has climbed from 4 to 14%.<\/p>\n<p>But nonetheless, there is still a fad-like quality to this notion of Gluten-free being the most recent savior to all our health problems, like weight loss, feeling horrible in general, etc. and there are plenty of people out there that are gravitating towards the gluten-free section of the store because they somehow think it is the healthier choice over other products.\u00a0 I recently attended a baseball game where one of the food kiosks was proudly claiming to be 100% gluten-free.\u00a0 But they were serving gluten-free pizza, hot dogs with gluten-free buns, soda, cotton candy and Lemonheads! Is it a big deal though?\u00a0 Maybe so because eating strictly gluten-free also means that you\u2019re missing out on a lot of key nutrients such as iron, calcium, fiber, thiamin, riboflavin, niacin and folate due to the fact that many grain products are enriched with these nutrients or have them naturally.<\/p>\n<p><strong>What Does a Vegan Need To Know About Going Gluten-free?<\/strong><\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3943\" title=\"Vegan_Lunch\" alt=\"\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/450px-Vegan_Lunch.jpg\" width=\"300\" height=\"400\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/450px-Vegan_Lunch.jpg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2012\/08\/450px-Vegan_Lunch-225x300.jpg 225w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/strong>The challenge for a vegan is that your choices are even more restrictive than your carnivore counterparts.<\/p>\n<p><strong><em>Gluten-containing No-No\u2019s for vegans (unless specifically labeled Gluten-free): <\/em><\/strong><\/p>\n<p>Bulgur<\/p>\n<p>Farina<\/p>\n<p>Semolina<\/p>\n<p>Spelt<\/p>\n<p>Durum Flour<\/p>\n<p>Graham Flour<\/p>\n<p>Kamut<\/p>\n<p>Imitation meat or seafood<\/p>\n<p>Soy Sauce<\/p>\n<p>Seasoned rice mixes<\/p>\n<p>Seasoned snack foods<\/p>\n<p>Salad dressings and Sauces<\/p>\n<p>Matzo<\/p>\n<p>French Fries<\/p>\n<p>Soups or soup bases<\/p>\n<p>Oats(unless specifically labeled because grain is oftentimes contaminated with wheat during the growing and processing stages of production)<\/p>\n<p>Medication and Vitamins that use gluten as a binding agent<\/p>\n<p>Food additives, such as malt flavoring, modified food starch and others<\/p>\n<p><strong>Safe Gluten-free Vegan Foods<\/strong><\/p>\n<p>Amaranth<\/p>\n<p>Arrowroot<\/p>\n<p>Buckwheat<\/p>\n<p>Corn and cornmeal<\/p>\n<p>Flax<\/p>\n<p>Rice, soy, corn, potato and bean flours<\/p>\n<p>Hominy<\/p>\n<p>Millet<\/p>\n<p>Quinoa<\/p>\n<p>Rice<\/p>\n<p>Sorghum<\/p>\n<p>Soy<\/p>\n<p>Tapioca<\/p>\n<p>Teff<\/p>\n<p><em>Celiac disease is a terrible condition with far-reaching ill-health consequences so personally I\u2019m glad to see that even a food choice that has some fad-like qualities can actually benefit people who before would have to spend a lot more time worrying about hidden gluten and cross-contamination.
