You go to a family or work function and everyone wants your recipe? It happens to me all the time!<\/div>\n<div class=\"mceTemp\">I would like to share with you a gluten free vegan recipe for chocolate cupcakes w\/ peanut butter buttercream frosting.<\/div>\n<div class=\"mceTemp\">Cupcakes:<\/div>\n<p>1 cup rice\/soy\/almond milk<br \/>\n1\/3 cup sunflower oil<br \/>\n2 tablespoons rice\/soy\/almond yogurt<br \/>\n3\/4 cup evaporated cane juice\/cane sugar\/coconut sugar<br \/>\n2 teaspoons vanilla extract<br \/>\n1\/4 teaspoon almond extract<br \/>\n1\/4 cup tapioca starch\/flour<br \/>\n2 tablespoons ground flax seed<br \/>\n1\/3 cup unsweetened cocoa powder<br \/>\n1\/2 cup quinoa flour<br \/>\n1\/2 cup brown\/white rice flour<br \/>\n1 teaspoon baking powder<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/4 teaspoon sea salt<\/p>\n<p>Oven at 350.<\/p>\n<p>Combine milk, oil, sugar and extracts. Mix w\/ stand mixer\/hand mixer on medium to combine.<br \/>\nAdd tapioca and flax seed and beat about a minute.<br \/>\nAdd cocoa, flours, baking powder, soda and salt.\u00a0 Mix on medium-high for 2 minutes.<br \/>\nFill liners about 3\/4 full and bake 20ish minutes. Toothpick test.<br \/>\nTake your yummy creation out of oven,\u00a0out of the pan, and place them on\u00a0a wire rack.<\/p>\n<p>Peanut Butter Buttercream Frosting (Will make your tummy say thank you!!)<\/p>\n<p>1\/2 cup Earth Balance vegan buttery sticks<br \/>\n1\/3 cup creamy or chunky pb<br \/>\n1 1\/2 teaspoons vanilla extract<br \/>\n1 1\/4 cups confectioner&#8217;s\/powdered sugar &#8211; make sure you sift it!<br \/>\n1 or 2 tablespoons rice\/soy\/almond milk<\/p>\n<p>With stand mixer\/handheld mixer cream the\u00a0sticks at medium until smooth. Add the pb and vanilla and beat\u00a02-3 minutes.\u00a0Beat in\u00a0sugar\u00a0until it\u00a0becomes stiff. Ever so slowly, trinkle in the milk\u00a0a few drops at\u00a0 time\u00a0and continue to beat\u00a0until fluffy. Voila! You&#8217;re done.<\/p>\n<p>Inject\u00a0the frosting into the middle of the cupcake and frost on\u00a0top and then drizzle some chocolate sauce and add some peanuts, too!
