In addition to Mediterranean countries, escabeche is common in Salvadoran, Panamanian, Peruvian, Philippine, Puerto Rican, Dominican, Guatemalan and Mexican cuisine.<\/p>\n<p style=\"text-align: justify;\">And although escabeche is generally identified with fish dishes, it also refers to the vegan marinade itself. In Mexico, sliced or whole jalape\u00f1os en escabeche are used as a garnish for a variety of dishes.<\/p>\n<p style=\"text-align: justify;\">Here\u2019s my vegan recipe and my directions for making jalape\u00f1os en escabeche.<\/p>\n<p style=\"text-align: justify;\">Ingredients:<br \/>\n1 lb jalape\u00f1o peppers<br \/>\n1\/3 cup olive oil<br \/>\n2-3 medium white or yellow onions (thickly sliced)<br \/>\n3 medium carrots (scrubbed and thickly sliced)<br \/>\n1 head garlic (cloves separated and peeled)<br \/>\n4 cups apple cider vinegar<br \/>\n1 cup water<br \/>\n2 tablespoons Kosher salt or sea salt<br \/>\n2 bay leaves<br \/>\n1\/2 teaspoon dried oregano<br \/>\n4 sprigs of fresh marjoram or 1\/4 teaspoon dried<br \/>\n4 sprigs of fresh thyme or 1\/4 teaspoon dried<br \/>\n1 tablespoon agave nectar<\/p>\n<p style=\"text-align: justify;\">Directions:<\/p>\n<div id=\"attachment_2321\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/1.jpg\" ><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2321\" class=\"size-full wp-image-2321\" title=\"1\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/1.jpg\" alt=\"\" width=\"500\" height=\"299\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/1.jpg 500w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/1-300x179.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><p id=\"caption-attachment-2321\" class=\"wp-caption-text\">Prep for the marinade<\/p><\/div>\n<p style=\"text-align: justify;\">Wash the chiles, leaving the stems intact. Cut a cross in the tip end of each chile so that the vinegar will be able to penetrate. It allows me to peel multiple cloves at a time.<\/p>\n<div id=\"attachment_2323\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/3.jpg\" ><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2323\" class=\"size-full wp-image-2323\" title=\"3\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/3.jpg\" alt=\"\" width=\"500\" height=\"329\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/3.jpg 500w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/3-300x197.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><p id=\"caption-attachment-2323\" class=\"wp-caption-text\">Fresh veggies - fry for approx. 10 minutes<\/p><\/div>\n<p style=\"text-align: justify;\">Heat oil in a large, deep skillet. Add the chiles, onions, carrots, and garlic.\u00a0Fry over medium heat for about 10 minutes, turning them over occasionally.<\/p>\n<p style=\"text-align: justify;\">Add the vinegar, water, salt, herbs, and nectar and bring to a boil. Lower the heat and simmer for 10 minutes.
