The French fine-dining  restaurant re-opened on June 23, as Covid-restrictions lifted in the city. After 10 years in service, the restaurant&#8217;s menu is now entirely plant-based.<\/p>\n\n\n\n<figure class=\"wp-block-pullquote\"><blockquote><p>&#8220;I believe it is our duty as human beings to leave the planet in a better state than we found it, and a very good place to start is addressing the impact we make with our needless and selfish consumption of animals.<\/p><p>I am a classically trained French chef who held Michelin stars for 12 years and the thought of someone like me being vegan would have been insane five or ten years ago. But now the world is waking up. This is the future.&#8221;<\/p><cite><a target=\"_blank\" href=\"http:\/\/www.alexisgauthier.co.uk\/\"  rel=\"external nofollow\">Chef Alexis Gauthier<\/a><\/cite><\/blockquote><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">A Past &amp; Future with Plants<\/h2>\n\n\n\n<p>When Chef Gauthier opened his restaurant in 2011,  he had a strong interest in serving plant-focused dishes. At that time, 20-30% of the restaurants bookings were already vegetarian tasting menus, according to the <a target=\"_blank\" href=\"http:\/\/www.gauthiersoho.co.uk\/veganism.php\"  rel=\"external nofollow\">restaurant&#8217;s website<\/a>. <\/p>\n\n\n\n<p>Five years later, when Gauthier went vegan himself, the idea of removing animal products from the kitchen became more personally compelling. However it took a few years to make this dream a reality, Gauthier told <a target=\"_blank\" href=\"https:\/\/www.bighospitality.co.uk\/Article\/2021\/04\/13\/Alexis-Gauthier-on-his-123-Vegan-plant-based-restaurant-in-Mayfair\"  rel=\"external nofollow\">BigHospitality<\/a>, due to differing opinions on how the dining experience would be effected.
