Sarma, the head chef and creator of exquisite raw food for the restaurant, graciously shares her raw lasagna with us today. Even though there are many parts to this recipe, it&#8217;s completely worth it to take the time needed to build what she calls <em>Zucchini-and-Green-Zebra-Tomato Lasagne<\/em>.<\/p>\n<p><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/Lasagna.jpg\" ><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2251\" title=\"Lasagna\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/Lasagna-1024x681.jpg\" alt=\"\" width=\"620\" height=\"412\" \/><\/a><\/p>\n<p><strong>Zucchini-and-Green-Zebra-Tomato Lasagne with Basil-Pistachio Pesto<\/strong><\/p>\n<p>Servings\u00a0<em>6<\/em><\/p>\n<p><strong>Lemon-Pignoli\u00a0<\/strong><strong>\u201c<\/strong><strong>Ricotta<\/strong><strong>\u201d<\/strong><strong><br \/>\n<\/strong>2 cups raw pignoli nuts, soaked in water for at least 1 hour<br \/>\n2 tablespoons lemon juice<br \/>\n2 tablespoons nutritional yeast<br \/>\n1 teaspoon sea salt<\/p>\n<p><strong>Tomato Sauce<\/strong><strong><br \/>\n<\/strong>2 cups good-quality sun-dried tomatoes (dry-packed), soaked in water for at least 2 hours<br \/>\n1 medium ripe tomato, diced<br \/>\n1\u20444 small onion, chopped<br \/>\n2 tablespoons lemon juice<br \/>\n1\u20444 cup extra-virgin olive oil<br \/>\n4 teaspoons maple syrup<br \/>\n2 teaspoons sea salt<br \/>\nPinch hot-pepper flakes<\/p>\n<p><strong>Basil-Pistachio Pesto<\/strong><strong><br \/>\n<\/strong>2 cups packed basil leaves<br \/>\n1\u20442 cup raw pistachios<br \/>\n6 tablespoons extra-virgin olive oil<br \/>\n1 teaspoon sea salt, or to taste<br \/>\nPinch freshly ground black pepper<\/p>\n<p><strong>Lasagne<\/strong><strong><br \/>\n<\/strong>3 medium zucchini, ends trimmed<br \/>\n3 medium green-zebra tomatoes (or other heirloom variety)<br \/>\n2 tablespoons extra-virgin olive oil<br \/>\n1 tablespoon finely chopped fresh oregano<br \/>\n1 tablespoon fresh thyme leaves<br \/>\nGarnish: whole basil leaves<\/p>\n<p><em><strong>Cooking Instructions<\/strong><\/em><\/p>\n<p><span style=\"text-decoration: underline;\">Lemon-Pignoli\u00a0\u201cRicotta\u201d<br \/>\n<\/span>Place the pignoli, lemon juice, nutritional yeast, and salt in a food processor, and pulse a few times, until thoroughly combined. Gradually add 6 tablespoons water, and pulse until the texture becomes fluffy, like ricotta. Place in a bowl, cover with plastic wrap, and set aside.<\/p>\n<p><span style=\"text-decoration: underline;\">Tomato Sauce<\/span><br \/>\nPlace all ingredients in a blender, and process until smooth.<\/p>\n<p><span style=\"text-decoration: underline;\">Basil-Pistachio Pesto<\/span><br \/>\nPlace all ingredients in a blender, and process until smooth.<\/p>\n<p><span style=\"text-decoration: underline;\">Lasagne<br \/>\n<\/span>Using a mandolin or vegetable peeler, shave zucchini lengthwise into very thin slices, then cut in half crosswise. Cut the tomatoes in half, and each half into thin slices. Line the bottom of a 9-by-13-inch baking dish with two layers of zucchini slices. Brush the zucchini lightly with olive oil, spread 1\u20443 of the tomato sauce over it, and top with small dollops of \u201cricotta\u201d and pesto, using 1\u20443 of each. Layer on 1\u20443 of the tomato slices, and sprinkle with 1\u20443 of the oregano and thyme. Add another double layer of zucchini and repeat twice more with the tomato sauce, pesto, ricotta, tomato slices, and herbs. Serve immediately, or cover with plastic and let sit at room temperature for a few hours.
