margin-bottom: 0px;\" class=\"sharethis-inline-share-buttons\" ><\/div><p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2262\" title=\"SUTRA\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA-logo.jpeg\" alt=\"\" width=\"600\" height=\"180\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA-logo.jpeg 600w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA-logo-300x90.jpeg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>As an honored new blogger for <a href=\"https:\/\/www.happycow.net\" >HappyCow.net<\/a>, I am excited to blog about vegan restaurants around the country.\u00a0 I travel every week and one of the first things I always do when I go to a new city is get on HappyCow to find out what the best vegan restaurants and grocery stores are in the town I am visiting!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-2265\" title=\"SUTRA\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA2.jpeg\" alt=\"\" width=\"317\" height=\"390\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA2.jpeg 396w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA2-243x300.jpeg 243w\" sizes=\"auto, (max-width: 317px) 100vw, 317px\" \/>Today, I kick off my blog with my all-time favorite restaurant, <strong><a href=\"https:\/\/www.happycow.net\/reviews.php?id=15427\" >Sutra<\/a><\/strong>.\u00a0 Located in Seattle, WA, Sutra is becoming famous for is incredible 4-course Prix Fixe meals made by rising star vegan chef, Colin Patterson.\u00a0 As the former Executive Chef for Blossoming Lotus on Kauai, Colin is renowned for his culinary expertise in both vegan and raw cuisine.\u00a0 Eventually, he returned to his hometown of Seattle, where he opened both Sutra restaurant and <a target=\"_blank\" href=\"http:\/\/www.sutrayogaseattle.com\/\"  rel=\"external nofollow\">Sutra Yoga<\/a> with his partner, Amber, and best friend Aaron.<\/p>\n<p>In many vegan restaurants, the menu is dominated by meat substitutes.\u00a0 Yet I don\u2019t think I\u2019ve ever seen tofu, seitan or tempeh on a plate at Sutra.\u00a0 There is no veganaise, soy cheese or margarine used in anything.\u00a0 Even their coconut ice creams are made from scratch.<\/p>\n<p>Every day, Colin gets local, organic food that is in season, and puts together a menu for the week based on the freshest ingredients he can find.\u00a0 But Colin, Amber and Aaron are not only committed to serving true vegan <em>cuisine<\/em>, they are also dedicated to doing so in a sustainable fashion.\u00a0 Rightly so, they are very proud that their bar is made from driftwood, they print their weekly menus on 100% recycled garbage bags, and they compost so much of their waste that their garbage can at the restaurant fills up slower than the one in their home.<\/p>\n<p>However, if all this impresses you, wait until you taste the food.\u00a0 Having eaten there well over a dozen times, I generally take one bite and exclaim, \u201c<em>This is the best meal I\u2019ve ever had<\/em>!\u201d\u00a0 Relying on the <span style=\"text-decoration: underline;\">food<\/span> to create the flavor \u2013 not salt, sugar or condiments \u2013 you will be surprised at just how amazing smoked lentils, morels, and arugula can taste.\u00a0 And be surprised!\u00a0 <img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-2263\" title=\"Colin Patterson, Executive Chef and Owner, Sutra\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA.jpeg\" alt=\"\" width=\"250\" height=\"316\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA.jpeg 250w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA-237x300.jpeg 237w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/>Even though I eat at restaurants more than I eat at my own home, there is <em>always<\/em> something on the menu I have never heard of in my life!<\/p>\n<p>My great friend, Sharon, and I meet almost monthly at <a target=\"_blank\" href=\"http:\/\/www.sutraseattle.com\/\"  rel=\"external nofollow\">Sutra<\/a> for a girls\u2019 night out.\u00a0 Last week, we had an amazing course of \u201cRoasted Cauliflower, Mung Bean, Cashew Cheese, House-Smoked Morel Cake, served atop Sauteed Chard &amp; Radish Greens, finished with a Black Lemon-Molasses Reduction, Peppercress Oil and finished with Parsnip Chips.\u201d\u00a0 It was <em>divine<\/em>. We took tiny little bites to savor it, and completely forgot whatever it was we were talking about.\u00a0 While you won\u2019t get to choose what you want off a menu (it\u2019s prix fixe, with one menu for the night), you can absolutely sit back a know with full confidence that you will absolutely love whatever is put in front of you.\u00a0 If you have food allergies or sensitivities to salt, alcohol, etc, Colin will warmly take care of you.<\/p>\n<p>Let me finish with some tips for dining at Sutra.\u00a0 Sutra is a small restaurant, and is becoming <em>very<\/em> popular.\u00a0 On a recent Wednesday night, they turned away 15 people.\u00a0 They have a 7:00 seating on Tuesday, Wednesday and Thursday, and 6:30 and 9:00 seatings on Friday and Saturday.\u00a0 Price is $35 for all four courses \u2013 drinks are extra.<\/p>\n<p style=\"text-align: left;\">If you\u2019re coming alone or with just one other person, consider sitting at the bar where you can watch Colin cook, and chat with him and Aaron throughout the night.\u00a0 There are only four seats at the bar. If you\u2019d like a glass of wine, make sure Aaron knows you\u2019d like a vegan wine.\u00a0 They have many to choose from, but not all of their wines are vegan.\u00a0 Also, don\u2019t forget to make a reservation \u2013 even to sit at the bar.\u00a0 It is unlikely to be able to walk in without a reservation given how popular the restaurant has become.\u00a0 If you want reservations for a late seating on Friday or Saturday, you can probably get away with calling one day ahead or maybe on the actual day.\u00a0 For any other seatings, call several days ahead, if not a full week or two.<\/p>\n<p style=\"text-align: left;\">Finally, plan on sitting back, being well-taken care of, and thoroughly enjoying your dinner.\u00a0 You will not be disappointed!<img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2264 aligncenter\" title=\"dessert\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA1.jpeg\" alt=\"\" width=\"300\" height=\"375\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA1.jpeg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2011\/08\/SUTRA1-240x300.jpeg 240w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>As an honored new blogger for HappyCow.net, I am excited to blog about vegan restaurants around the country.\u00a0 I travel every week and one of the first things I always do when I go to a new city is get on HappyCow to find out what the best vegan restaurants and grocery stores are in the town I am visiting!
