In today\u2019s post, we explore the effect of what we eat on <i>world hunger<\/i>. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">If you have not yet seen the film <a href=\"http:\/\/www.plantpurenation.com\/\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">PlantPure Nation<\/span><\/a>, do so. Especially for those of us who are involved with <a href=\"https:\/\/www.happycow.net\"  target=\"_blank\">HappyCow<\/a>, it is a gift of a film. It powerfully explores these themes and suggests practical ways that individuals can contribute to solutions. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">According to the Food and Agriculture Organization (FAO) of the United Nations, of the world\u2019s nearly 7.4 billion humans, \u201cAlmost 1 billion people are malnourished.\u201d <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">This post opens with the FAO\u2019s definition of hunger, as it appeared in an HSI [Humane Society International] Report<i>: The Impact of Industrialized Animal Agriculture on World Hunger<\/i> (<a href=\"http:\/\/www.fao.org\/fileadmin\/user_upload\/animalwelfare\/HSI--The%2520Impact%2520of%2520Industrialized%2520Animal%2520Agriculture%2520on%2520World%2520Hunger.pdf\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">Food and Agriculture Organization of the United Nations, 2008<\/span><\/a>).<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">The term \u201cenough calories\u201d really means \u201cenough nutrient-rich calories\u201d. People whose diets are mainly comprised of sugar and processed products may be filling their bellies every day, but their bodies are not being fed what they need to be healthy. So, they are hungry in the sense of being undernourished. With one in 7.4 people on the planet malnourished, it is likely that each of us knows at least one hungry person.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">Most undernourished people are in the developing world, but millions live in the US. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">When you were young, were you told to clean your plate because there are starving children in the world? Many who had this experience have complicated feelings about what any individual can do to alleviate world hunger. On the one hand, of course we want to do what we can to help a hungry person. Young children are, by nature, compassionate, and they want to help others. On the other hand, media images of hungry children and starving people with bloated bellies cause many of us to avert our eyes. We feel overwhelmed by the enormity of the problem, and helpless to do anything substantive.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">As we considered this, we thought that, since each of us can relate to the experience of being hungry, and all of us know at least one malnourished person, we could spotlight the theme of <b><i>kindness<\/i><\/b> as we explore what each of us can personally do to contribute to solving the world\u2019s hunger challenges.\u00a0<\/span><\/p>\n<p class=\"p1\"><span style=\"text-decoration: underline;\"><span class=\"s1\">Definition of Kind<\/span><\/span><span class=\"s2\"><span style=\"text-decoration: underline;\">:<\/span> \u201cA group united by common traits or interests\u201d.<\/span><\/p>\n<p class=\"p1\"><span style=\"text-decoration: underline;\"><span class=\"s1\">Definition of Kindness<\/span><\/span><span class=\"s2\"><span style=\"text-decoration: underline;\">:<\/span> \u201cThe quality or state of being gentle and considerate\u201d.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">Kindness is a unifying energy. Many people are not yet aware that we are one united body. Before this awareness dawns on us, we regard each individual as a separate being. In the unified model, the hunger of any individual is a reflection of the hunger that everyone feels, physically, emotionally and spiritually. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">When we become more kind, we connect to the common traits and interests shared by all of life. We treat one another with gentleness and consideration.\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"> <a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Matthieu-Ricard.jpg\"  rel=\"attachment wp-att-15734\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-15734\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Matthieu-Ricard.jpg\" alt=\"Photo Matthieu Ricard\" width=\"191\" height=\"264\" \/><\/a>Matthieu Ricard is a Buddhist monk who has contributed greatly to helping people develop a daily practice of kindness and compassion. He has participated in research studies on brain neuroplasticity (changes in the brain) and has been dubbed \u201cthe happiest man in the world\u201d by neuroscience researchers because of the brain activity they documented when he was being scanned. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">In a <a href=\"https:\/\/www.youtube.com\/watch?v=n7T7vZr0c6s\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">6-minute video<\/span><\/a>, he offers his thoughts on why moving away from a diet that includes animal products is important for individuals to develop compassion, and to help feed the hungry world.\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">In December 2015, he was <a href=\"http:\/\/www.today.com\/kindness\/secrets-kindness-matthieu-ricard-worlds-happiest-man-t53146\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">interviewed by the Today Show<\/span><\/a> about the \u201csecret of happiness\u201d. <i>Putting others first <\/i>is his recommendation, because it creates a long-lasting feeling of well-being in the individual who does so. If you find these resources of interest, you may want to read his book, <a href=\"http:\/\/www.amazon.com\/Happiness-Guide-Developing-Lifes-Important-ebook\/dp\/B000SEUSXW\/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1456992154&amp;sr=1-1&amp;keywords=happiness+matthieu+ricard\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\"><i>Happiness: A Guide To Developing Life\u2019s Most Important Skill<\/i><\/span><\/a>, within which he offers a loving kindness meditation that many find to be very powerful.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal.jpg\"  rel=\"attachment wp-att-15733\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-15733\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal.jpg\" alt=\"Photo Karen Sokal\" width=\"175\" height=\"230\" \/><\/a>Dr. Karen Sokal, MD, MPH, is a Clinical Professor of Community Health and Human Development at the UC Berkeley-UCSF Joint Medical Program. Karen worked in the Peace Corps before she attended Yale University as an undergraduate, and served for two years in Ecuador, helping to address public health issues like sanitation. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"> Karen recalls that, even though the rural Ecuadorian people were very poor, their smiles sparkled with beautiful white teeth. When she returned for a visit only two decades after her Peace Corps service, she was shocked to see that their smiles had changed dramatically. She was especially saddened to see that most children suffered from severe dental caries, many in so much pain that they could not play or go to school. <\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal-Ecuador-age-18.jpg\"  rel=\"attachment wp-att-15732\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-15732\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal-Ecuador-age-18-279x300.jpg\" alt=\"Photo Karen Sokal Ecuador age 18\" width=\"150\" height=\"161\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal-Ecuador-age-18-279x300.jpg 279w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Karen-Sokal-Ecuador-age-18.jpg 500w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><\/a>Karen learned that, over the two decades since she lived there, companies like Coca Cola had brought their products into rural villages and provided financial incentives for people to set up convenience stores filled with packages, cans and bottles that have a long shelf life. Gradually, the people had replaced their traditional diet with these salty, fatty, sugary, tasty products, even putting Coke into baby bottles.<\/span><\/p>\n<p class=\"p4\"><span class=\"s4\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Childrens-Oral-Health-and-Nutrition-Project.-2-jpg.jpg\"  rel=\"attachment wp-att-15730\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15730\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Childrens-Oral-Health-and-Nutrition-Project.-2-jpg-300x182.jpg\" alt=\"Photo Children's Oral Health and Nutrition Project. 2 jpg\" width=\"300\" height=\"182\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Childrens-Oral-Health-and-Nutrition-Project.-2-jpg-300x182.jpg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Childrens-Oral-Health-and-Nutrition-Project.-2-jpg.jpg 450w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>As a result of these realizations, Karen established <a href=\"http:\/\/www.internationalintegrators.org\/philanthropy\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">The Children\u2019s Oral Health and Nutrition Project<\/span><\/a>, which<\/span><span class=\"s2\"> brings nutrition education to ten countries. While teaching about dental hygiene and giving fluoride treatments, teams educate local health care workers and parents about the importance of breastfeeding and feeding children real and healthful food\u2014maintaining their traditional diet, which is mostly comprised of whole plant foods\u2014and avoiding processed junk food and sugary beverages.\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\">Hunger and poor nutrition exist throughout the world, and are not limited to war-torn and poor countries. Consider the following, from the <a href=\"http:\/\/www.feedthechildren.org\/why\/food\/\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">Save the Children Foundation<\/span><\/a>, about nutrition in the United States:<\/span><\/p>\n<p class=\"p5\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\"><b>By The Numbers: Hunger in America<\/b><\/span><\/p>\n<p class=\"p7\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\"><b>23 MILLION<\/b><\/span><\/p>\n<p class=\"p8\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\">More than 23 million people in America live in food deserts. They don\u2019t have grocery stores, so their only choices for food are convenience stores and fast food restaurants. (<a href=\"http:\/\/www.ers.usda.gov\/media\/242654\/ap036_reportsummary_1_.pdf\" style=\"color: #339966;\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s5\"><i>USDA<\/i><\/span><\/a>)<\/span><\/p>\n<p class=\"p7\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\"><b>12.5 MILLION<\/b><\/span><\/p>\n<p class=\"p8\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\">Approximately 17% (or 12.5 million) of U.S. children and adolescents aged 2 to 19 years are obese. (<a href=\"http:\/\/www.cdc.gov\/obesity\/data\/childhood.html\" style=\"color: #339966;\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s5\"><i>CDC<\/i><\/span><\/a>)<\/span><\/p>\n<p class=\"p7\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\"><b>13%<\/b><\/span><\/p>\n<p class=\"p8\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\">While a large majority (75%) of U.S. women start out breastfeeding their babies, only 13% breastfeed exclusively until their baby is 6 months old. (<a href=\"http:\/\/www.cdc.gov\/obesity\/childhood\/problem.html\" style=\"color: #339966;\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s5\"><i>CDC<\/i><\/span><\/a>)<\/span><\/p>\n<p class=\"p7\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\"><b>80%<\/b><\/span><\/p>\n<p class=\"p8\" style=\"text-align: center;\"><span class=\"s2\" style=\"color: #339966;\">On a typical school day, 80% of U.S. kids drink sugary drinks, the largest source of added sugar and a major source of calories in children\u2019s diets. (<a href=\"http:\/\/www.cdc.gov\/obesity\/childhood\/problem.html\" style=\"color: #339966;\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s5\"><i>CDC<\/i><\/span><\/a>)<\/span><\/p>\n<p class=\"p11\"><span class=\"s2\"> <a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Comfortably-Unaware-book.jpg\"  rel=\"attachment wp-att-15731\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15731\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Comfortably-Unaware-book-201x300.jpg\" alt=\"Photo Comfortably Unaware book\" width=\"201\" height=\"300\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Comfortably-Unaware-book-201x300.jpg 201w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-Comfortably-Unaware-book.jpg 334w\" sizes=\"auto, (max-width: 201px) 100vw, 201px\" \/><\/a>Dr. Richard Oppenlander, author of <a href=\"http:\/\/www.amazon.com\/Richard-A.-Oppenlander\/e\/B0081KQ3E8\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\"><i>Food Choice and Sustainablilty<\/i><\/span><\/a><i>, <\/i>reports in his blog entitled <a href=\"http:\/\/www.comfortablyunaware.com\/blog\/the-world-hunger-food-choice-connection-a-summary\/\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\"><i>The World Hunger-Food Choice Connection: A Summary<\/i><\/span><\/a> that,<i> <\/i>worldwide, 82% of starving children live in countries where the crops that are grown are fed to livestock. The livestock is then exported to and eaten by people in western countries.<span class=\"Apple-converted-space\">\u00a0 \u00a0<\/span><\/span><\/p>\n<p class=\"p11\"><span class=\"s2\">This point is highlighted in Matthieu Ricard\u2019s <a href=\"https:\/\/www.youtube.com\/watch?v=n7T7vZr0c6s\"  target=\"_blank\" rel=\"external nofollow\"><span class=\"s3\">video<\/span><\/a> mentioned above.<\/span><\/p>\n<p class=\"p11\"><span class=\"s2\">We all\u2014especially growing children\u2014deserve to eat the kinds of foods that improve our strength. We can do this if people have access to healthy food, can afford to buy it, know how to cook it, learn to enjoy it and choose to eat it. <\/span><\/p>\n<p class=\"p1\"><span class=\"s3\"><a href=\"http:\/\/www.fao.org\/fileadmin\/user_upload\/animalwelfare\/HSI--The%2520Impact%2520of%2520Industrialized%2520Animal%2520Agriculture%2520on%2520World%2520Hunger.pdf\"  target=\"_blank\" rel=\"external nofollow\">In 2008, the FAO<\/a><\/span><span class=\"s2\"> concluded in their report: <\/span><\/p>\n<p class=\"p12\"><span class=\"s2\"><i>Industrial animal agriculture is not a sustainable option in a carbon constrained world, where nearly 1 billion people do not get enough food. Phasing out industrial confinement facilities in favor of extensive farming systems will be necessary as agriculture moves to less fossil fuel-intensive methods of production. <\/i><\/span><\/p>\n<p class=\"p12\"><span class=\"s2\"><i>In addition, consumers will need to reduce their reliance on meat, eggs, and milk, and replace them with plant-based sources of protein and other nutrients. Governments and policymakers, however, also need to play a role in creating a global diet that can feed everyone and protect the environment. <\/i><\/span><\/p>\n<p class=\"p12\"><span class=\"s2\"><i>The failures of industrial animal agriculture, including its contribution to hunger and greenhouse gas emissions, may have been unintentional, but that does not negate the hasty need for moving to more environmentally sustainable and healthier methods of food production.<\/i><\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-4-COS4S-logo-1.png\"  rel=\"attachment wp-att-15729\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15729\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-4-COS4S-logo-1-300x212.png\" alt=\"Photo 4 COS4S logo\" width=\"300\" height=\"212\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-4-COS4S-logo-1-300x212.png 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-4-COS4S-logo-1-768x543.png 768w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/03\/Photo-4-COS4S-logo-1-1024x724.png 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>The\u00a0<b><i>4 COS4S<\/i><\/b><i> <\/i>initiative is led by <b>International Integrators<\/b> Facilitator Caty Genestra Villalonga in Spain.\u00a0<b><i>4COS4S<\/i><\/b><i>\u00a0<\/i>started by inviting restaurants on the Mediterranean island of Mallorca to add to their menus \u201c4 things\u201d whose ingredients are whole food, plant-based and do not include any animal products and at most a small amount of refined products such as oil, sugar and salt.\u00a0\u00a0<b><i>4 COS4S<\/i><\/b>\u00a0now includes a\u00a0<i>Restaurant Project<\/i>, an\u00a0<i>Education Project<\/i>\u00a0and a\u00a0<i>Medical Project<\/i>.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><i> <\/i>The expression \u201ccuatro cosas\u201d (\u201cfour things\u201d) is used frequently in Spain. For instance, you might say, \u201cI have to move four things before the painters arrive to paint my kitchen.\u201d The number of things usually is not four, but the literal translation of the expression is \u201cfour things\u201d.<\/span><\/p>\n<p class=\"p1\"><span class=\"s2\"><b><i>4 COS4S<\/i><\/b>\u00a0is a way of encouraging us all to incorporate more whole, plant-based foods in our diets. By doing so, we engage with the<i> power of kindness<\/i>. The kindness that we show <i>our bodies, the Earth, animals <\/i>and<i> those in our world who are hungry<\/i> has an enormous impact on the health of all living beings.\u00a0Every time we choose to eat whole, plant-based foods, we are contributing kindness and solutions to some of the largest challenges our world faces. Through this blog, we are sharing some of the resources with which we have engaged, so that, together, we can continue our journey of learning as an\u00a0<b>International Integrators<\/b>\u00a0community<\/span><span class=\"s6\">.<\/span><\/p>\n<p class=\"p15\"><span class=\"s2\"><b><i>Kathryn Hayward, M.D.\u00a0<\/i><\/b><i>was a primary care internal medicine specialist at the Massachusetts General Hospital and Harvard Medical School for 20 years.
