It\u2019s really colorful and pretty to look at, so it\u2019s also a nice dish to make for friends. If you want the fajitas a little more on the spicy side, add a little bit of fresh jalapeno pepper. Play around with the ingredients, and add things that you like, or delete what you don\u2019t like. And as always, it\u2019s extra special if you top it with some Vegan Garlic Aioli. You can also add a little bit of Garlic Cashew Cheese, too. Sriracha sauce<\/p>\n<p><strong>Corn Salsa Ingredients:<\/strong><br \/>\n2 C. frozen sweet corn (thawed)<br \/>\n1 large tomato, chopped<br \/>\n1 avocado,\u00a0cut into chunks<br \/>\n1\/2 cup cilantro, minced<br \/>\nJuice of 1\/2 lime<br \/>\nDash of sugar<br \/>\nSalt and pepper to taste<br \/>\n2 cups of cooked rice<\/p>\n<p><strong>Toppings:<\/strong><br \/>\n<a href=\"https:\/\/www.happycow.net\/blog\/vegan-condiment-staples-recipes\/\"  target=\"_blank\">Vegan Garlic Aioli<\/a><br \/>\nShredded Romaine lettuce<br \/>\nSriracha sauce (extra)<\/p>\n<p><strong>Directions:<\/strong><br \/>\nHeat olive oil in a large skillet over medium heat. Add onion, red bell pepper, green bell pepper, garlic and seitan. Saute until vegetables soften and\u00a0seitan gets slightly browned (approximately 7\u00a0\u2013 10 minutes), stirring frequently to keep\u00a0everything\u00a0from sticking. Add chili powder, cumin, salt and pepper, and continue to cook for several more minutes. Add water and bouillon paste and\u00a0Sriracha sauce. Increase heat and\u00a0bring to a slight boil, then immediately reduce heat to low, cover, and allow to simmer for about\u00a010 minutes. In the meantime, make the corn salsa. Combine the corn salsa ingredients in a large bowl and stir to incorporate the ingredients. To serve, divide rice evenly among four plates. Divide the fajitas evenly and place on top of the rice. Top the fajitas with a generous amount of corn salsa.
