When she was five years old, her parents emigrated to Venezuela, where she spent her childhood. Caty always had aspirations to become a doctor, but ended up working in the world of finance. During her 35 years in that profession, she led initiatives in a financial institution founded by an educator, which, she says, \u201cwas the first in Spain to introduce ethics into the world of money.\u201d<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Caty believes that \u201cwe come to this world to learn, and our unique legacy is the love that we leave in things that we do and people that we touch.\u201d\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">This philosophy seems in line with that of the visionaries who created and continue to develop<b> <a href=\"https:\/\/www.happycow.net\/\"  target=\"_blank\" rel=\"noopener\">HappyCow<\/a>. <\/b><\/span><\/p>\n<p class=\"p2\"><span class=\"s1\"><b><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2.png\"  rel=\"attachment wp-att-15274\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15274\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2-300x212.png\" alt=\"cosas 2\" width=\"300\" height=\"212\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2-300x212.png 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2-768x543.png 768w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2-1024x725.png 1024w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/cosas-2.png 1392w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>The 4 COS4S Mission<\/b><\/span><\/p>\n<p class=\"p3\"><span class=\"s1\"> The expression \u201cfour things\u201d (\u201ccuatro cosas\u201d) is used frequently in Spain. Elle\u2019s involvement in 4 COS4S has expanded its reach beyond Mallorca and the borders of Spain.<\/span><\/p>\n<p class=\"p6\"><span class=\"s1\"><b>Our Bodies<\/b><\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">The top three contenders in the competition among things that sicken and kill humans in developed countries are <a target=\"_blank\" href=\"http:\/\/www.cdc.gov\/nchs\/fastats\/deaths.htm\"  rel=\"external nofollow\"><span class=\"s2\">cancer, cardiovascular disease<\/span><\/a> and <a target=\"_blank\" href=\"http:\/\/www.hospitalsafetyscore.org\/newsroom\/display\/hospitalerrors-thirdleading-causeofdeathinus-improvementstooslow\"  rel=\"external nofollow\"><span class=\"s2\">medical errors<\/span><\/a>. In 1930, heart disease replaced infectious disease as the biggest threat, and by 1940, cancer, which until then had occupied the eighth cause of death spot, crept up to number two and has stayed there. An <a target=\"_blank\" href=\"http:\/\/www.nejm.org\/doi\/full\/10.1056\/NEJMp1113569\"  rel=\"external nofollow\"><span class=\"s2\">interactive graph<\/span><\/a> from a 2012 article in the <i>New England Journal of Medicine<\/i> illustrates these points. <\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">The 20<\/span><span class=\"s5\"><sup>th<\/sup><\/span><span class=\"s1\"> century\u2019s advances in conventional medicine, which improved health and lifespan through the development of antibiotics, vaccines and antimicrobial procedures, knocked infections out of first place. During the same century, changes in lifestyle, mostly related to diet and sedentary habits, brought heart disease and cancer to the top killer slots. People now also increasingly suffer from other lifestyle-related conditions including respiratory diseases, obesity, diabetes, allergies, arthritis, autoimmune conditions, chronic pain, sleep disorders, anxiety and depression. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">The medical system increasingly is becoming a part of the lifestyle of many people. A <a target=\"_blank\" href=\"http:\/\/newsnetwork.mayoclinic.org\/discussion\/nearly-7-in-10-americans-take-prescription-drugs-mayo-clinic-olmsted-medical-center-find\/\"  rel=\"external nofollow\"><span class=\"s2\">2013 Mayo Clinic report<\/span><\/a> found that nearly 70% of Americans take at least one prescription drug. In 2014, Americans spent $<a target=\"_blank\" href=\"http:\/\/www.statista.com\/statistics\/307237\/otc-sales-in-theus\/\"  rel=\"external nofollow\"><span class=\"s2\">31 billion <\/span><\/a>on non-prescription drugs. <\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">With its offers of a vast array of medications, tests, procedures and hospital experiences, the medical system, while meant to help us, can contribute to illness and death, and statistically is the <a target=\"_blank\" href=\"http:\/\/www.hospitalsafetyscore.org\/newsroom\/display\/hospitalerrors-thirdleading-causeofdeathinus-improvementstooslow\"  rel=\"external nofollow\"><span class=\"s2\">third cause of death of Americans<\/span><\/a>. Medication errors cause one death per day and injure 1.3 million people in the US annually, according to <span class=\"s2\">the FDA<\/span>. Unnecessary surgery and testing, other preventable errors in hospitals, hospital-borne infections and adverse drug effects contribute to injuries and deaths. These themes have been explored in many venues, including in a <a target=\"_blank\" href=\"http:\/\/www.npr.org\/sections\/health-shots\/2013\/09\/20\/224507654\/how-many-die-from-medical-mistakes-in-u-s-hospitals\"  rel=\"external nofollow\"><span class=\"s2\">September 2013 NPR report<\/span><\/a> and in a May 2015 <i>New Yorker Magazine<\/i> article called <a target=\"_blank\" href=\"http:\/\/www.newyorker.com\/magazine\/2015\/05\/11\/overkill-atul-gawande\"  rel=\"external nofollow\"><span class=\"s2\">Overkill<\/span><\/a>, by Dr. Atul Gawande.<\/span><\/p>\n<p class=\"p5\"><span class=\"s6\"><b><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-Einstein-3.jpg\"  rel=\"attachment wp-att-15277\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-15277\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-Einstein-3.jpg\" alt=\"Photo Einstein 3\" width=\"252\" height=\"189\" \/><\/a>Peace of Mind Comes With Consciously Overcoming Delusions<\/b><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><i>\u201cA human being is a part of the whole called by us \u2018universe,\u2019 a part limited in time and space. He experiences himself, his thoughts and feelings as something separated from the rest, a kind of optical delusion of his consciousness. The striving to free oneself from this delusion is the one issue of true religion. Not to nourish the delusion but to try to overcome it is the way to reach the attainable measure of peace of mind.\u201d <\/i><span class=\"s2\"><i>Letter Feb 12, 1950, Albert Einstein<\/i><\/span><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">Einstein wrote these words in a letter to<\/span><span class=\"s7\"> Robert S. Marcus, a father distraught over the death of his young son from polio.<\/span><span class=\"s1\"> In comforting the grieving father, Einstein encouraged him to free himself from the delusion that any human being is separate from the rest of the universe.<\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">Einstein\u2019s antidote to this \u201cdelusion\u201d is consciousness. A delusion lives in the dark shadows of our lives. Consciousness shines light on delusions, inviting us to see what is really there and make change. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><b><i><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-The-Campbell-Plan-book.jpg\"  rel=\"attachment wp-att-15278\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15278\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-The-Campbell-Plan-book-200x300.jpg\" alt=\"Photo The Campbell Plan book\" width=\"200\" height=\"300\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-The-Campbell-Plan-book-200x300.jpg 200w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-The-Campbell-Plan-book.jpg 333w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a>Delusion: \u201cI am aware of the consequences of my food choices\u201d<\/i><\/b><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">As this relates to how we care for our bodies, we start with an admission: much of what we do with and to our bodies is <i>unconscious<\/i>. For instance, we think that we \u201cchoose\u201d what we eat, but many of our decisions are guided by these \u201cdelusions\u201d:<\/span><\/p>\n<ul>\n<li class=\"li5\"><span class=\"s1\">Habit<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Tradition<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Comfort<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">What tastes good<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">\u201cIt\u2019s just this once, for this special occasion\u201d<\/span><\/li>\n<\/ul>\n<p class=\"p5\"><span class=\"s1\"> None of these takes into account what that particular choice does to the rest of the universe, the whole (the body, the Earth, the other living things on the Earth). <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><b><i>Delusion: \u201cI eat healthfully and when I don\u2019t, my body will recover so it\u2019s no big deal\u201d<\/i><\/b><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">What most people eat today is very different from the food that our ancestors ate.<span class=\"Apple-converted-space\">\u00a0 <\/span>Dr. Tom Campbell, in his book <span class=\"s2\"><i>The Campbell Plan<\/i><\/span>, describes three food groups in the modern diet: <\/span><\/p>\n<ol class=\"ol1\">\n<li class=\"li5\"><span class=\"s1\">Animal products<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Processed plant products <\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Whole, plant-based foods<\/span><\/li>\n<\/ol>\n<p class=\"p5\"><span class=\"s1\">Until industrialized production, diets were mostly comprised of whole plant-based foods, small amounts of animal products because you had to hunt, raise and\/or milk the animal to obtain them, and no processed foods because they had not yet been invented. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">The evolution of the human body over millennia is now challenged with and jolted by this enormous change in how we feed ourselves. Evolutionarily speaking, it\u2019s not a good turn of events for the health of our species. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><b><i>Delusion: \u201cI am in charge of my food choices\u201d<\/i><\/b><\/span><\/p>\n<p class=\"p5\"><a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-grocery-store-deli-counter.jpg\"  rel=\"attachment wp-att-15280\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-15280\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-grocery-store-deli-counter.jpg\" alt=\"photo grocery store deli counter\" width=\"500\" height=\"374\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-grocery-store-deli-counter.jpg 500w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-grocery-store-deli-counter-300x224.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p class=\"p5\"><span class=\"s1\">Walk around a grocery store filled with aisles of appealing packages with seductive labels promising this or that health benefit, tasty samples, hummable music, aromas of roasting meats and baking bread, and notice what you are tempted to put into your grocery cart. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"> <a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-junk-food-grocery-cart.jpg\"  rel=\"attachment wp-att-15281\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15281\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-junk-food-grocery-cart-300x225.jpg\" alt=\"Photo junk food grocery cart\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-junk-food-grocery-cart-300x225.jpg 300w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/Photo-junk-food-grocery-cart.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Spend 15 minutes standing at the check-out line and look in the passing grocery carts. How many processed and animal products do you see? These products are: <\/span><\/p>\n<ul>\n<li class=\"li5\"><span class=\"s1\">Readily available<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Cheap (maybe subsidized)<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Easy to prepare<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Quick to consume<\/span><\/li>\n<li class=\"li5\"><span class=\"s1\">Tasty<\/span><\/li>\n<\/ul>\n<p class=\"p5\"><span class=\"s1\">Modern eating habits are governed by convenience.<\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><b><i>Delusion: \u201cWhat I don\u2019t know does not hurt me\u201d<\/i><\/b><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"> <a href=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-crowded-chickens.jpg\"  rel=\"attachment wp-att-15279\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-15279\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2016\/02\/photo-crowded-chickens.jpg\" alt=\"photo crowded chickens\" width=\"275\" height=\"183\" \/><\/a>Farming today is very different from what it used to be. Modern industrialized farms have replaced small-scale family farms of the past with highly mechanized factories. Animals are kept in crowded conditions that prevent natural movement and make them sick. They are given hormones to make them grow faster and produce more dairy and eggs, and antibiotics to keep rates of infection below government-mandated levels. Despite this, many of the animals are diseased. The mouth is exquisitely designed to let us know if something is safe to eat. Up to 10,000 taste buds populate the tongue, mouth and upper tract, detecting various taste sensations, including bitter, salty, sweet, savory and sour. The smell receptors in the nose commune with the taste buds to give us the full experience of what we\u2019ve taken into the mouth. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">When we have a cold &#8212; viral illness that stuffs up the nose, sinuses and chest &#8212; the ability to taste gets altered. The rest of the body is affected by the virus, too. We are achy, feel sluggish, have a fever and need to rest. We live a few days or weeks in a state of misery. When we awaken on the day that we can finally taste food again, we know we are on the mend. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">Eating unhealthful food is like putting the body in a constant state of having a bad cold. Mouths and noses that are consistently exposed to products that are not healthful for the body alter the taste organs\u2019 ability to enjoy a wide variety of flavors. We lose our detection system for what is healthful for the rest of our bodies. We shrink the size of the banquet table that contains foods that taste good to us. We go mainly for the salty, sweet and fatty products. When we are in that state, foods with more complex or subtle seasonings are not delicious.<\/span><\/p>\n<p class=\"p5\"><span class=\"s1\"><b><i>Delusion: \u201cIt\u2019s too hard for me to learn a new way of eating\u201d<\/i><\/b><\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">By transitioning the diet to a whole food, plant-based way of eating, we detoxify our mouths and noses. Taste buds renew every two weeks or so. Before a month has passed, our taste sensations awaken to the delicious complexities offered by the wide variety of flavors held in whole foods, plants and seasonings. A mouth that gets used to eating whole food finds that other products are now not so appealing.\u00a0<\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">The joy of how good we feel once we have made the transition moves from the mouth and nose to the rest of the body. We clear chemicals and processed products from our bodies, and our energy and concentration improve. <\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">A diet consisting primarily of whole, plant-based foods like fruits, vegetables, grains, legumes and water promotes health by giving the body the variety of nutrients that it needs, and the satisfaction the body feels as it settles into a state of good nourishment. The more we eat this way, the healthier we are, as evidenced by the scientific work of <a target=\"_blank\" href=\"http:\/\/nutritionstudies.org\/\"  rel=\"external nofollow\"><span class=\"s2\">T.
