It\u2019s an extremely pretty dish, comes together very fast, and is a nice first course for company.<\/p>\n<p><span style=\"text-decoration: underline;\">ENSALADA DE PALLARES <\/span><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 16 oz. package of frozen baby lima beans<br \/>\n1 onion, diced<br \/>\n1 tablespoon olive oil<br \/>\n3 tomatoes, coarsely chopped<br \/>\n1 tablespoon aji amarillo paste<br \/>\n1 teaspoon oregano<br \/>\n1 \u00bd teaspoons salt<br \/>\nCilantro for garnish, chopped<\/p>\n<p><strong>Ingredients For Dressing:<\/strong><br \/>\n\u00bd cup reserved lima beans<br \/>\n\u00bd cup <a href=\"https:\/\/www.happycow.net\/blog\/vegan-condiment-staples-recipes\/\"  target=\"_blank\"><em>Vegan Garlic Aioli<\/em> <\/a>(see page 12)<br \/>\n\u00bd cup cilantro, chopped<br \/>\n\u00bd cup soy milk<br \/>\n\u00bd teaspoon salt<\/p>\n<p><strong>Directions:<\/strong><br \/>\nPlace frozen lima beans in a soup pot and add \u00bd cup of water. Bring to a boil. Reduce heat and cook until tender, approximately 15 minutes. Remove from heat and set aside. Allow to cool to room temperature.<\/p>\n<p>In large fry pan over medium heat, cook onion in olive oil until translucent. Add tomatoes, aji amarillo paste, oregano and salt. Cook for an additional two minutes. Remove from heat. Add all but \u00bd cup of the lima beans to the tomato mixture and stir. Season to taste with salt and pepper.<\/p>\n<p>Place all dressing ingredients in a blender and combine.<\/p>\n<p>Plate the bean, tomato and onion mixture. Drizzle the dressing over the top.
