Spoon some of the mixture in between the slices.<\/li>\n<li>Cover with foil and refrigerate overnight.<\/li>\n<li>Preheat the oven to 350\u00b0F.<\/li>\n<li>Spread the Praline Topping evenly over the bread slices and bake until puffed and light golden brown, about 40 minutes.<\/li>\n<li>Serve with maple syrup.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Praline Topping<\/strong><br \/>\n2 sticks (1 cup) vegan butter<br \/>\n1 cup packed light brown sugar<br \/>\n1 cup chopped pecans<br \/>\n2 Tbsp. light corn syrup or agave nectar<br \/>\n1\/2 tsp. ground cinnamon<br \/>\n1\/2 tsp. ground nutmeg<\/p>\n<ul>\n<li>Combine all the ingredients in a medium bowl and blend well.<\/li>\n<\/ul>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Smoky, Crunchy Breakfast Tempeh <\/strong><br \/>\n1 Tbsp. vegetable oil<br \/>\n8 oz. tempeh, very thinly sliced<br \/>\n2 tsp. liquid smoke<br \/>\n1 Tbsp. soy sauce or tamari<\/p>\n<ul>\n<li>Heat the oil in a saut\u00e9 pan over medium-high heat.<\/li>\n<li>Add the tempeh slices and fry on both sides until brown and crispy.<\/li>\n<li>Add the liquid smoke and soy sauce (be careful\u2014the oil may spatter) and cook for 1 more minute on each side.<\/li>\n<\/ul>\n<p><em>Makes 2 to 4 servings <\/em><\/p>\n<p><strong>\u00a0<\/strong><strong>\u00a0<\/strong><\/p>\n<p><strong>Garlic-Potato Crostini<\/strong><br \/>\n4 medium yellow potatoes, peeled and cubed<br \/>\n1 Tbsp. vegan margarine, plus more for buttering the bread<br \/>\n2 Tbsp. non-dairy cream cheese<br \/>\n4 marinated artichoke hearts, minced<br \/>\n1\u20132 Tbsp. soy Parmesan cheese<br \/>\n1\/2 cup grated vegan Monterey Jack cheese (try Follow Your Heart brand)<br \/>\n1 onion, grated<br \/>\n2 Tbsp. fresh chives, minced<br \/>\n1\/2 tsp. salt<br \/>\n1\/8 tsp. pepper<br \/>\n1 French baguette, cut into 1\/4-inch slices<br \/>\nGarlic salt, to taste<br \/>\nPaprika, to taste<\/p>\n<ul>\n<li>Boil the potatoes until tender, about 20 minutes. Drain and return to the pot, off the heat. While still warm, add the vegan margarine, non-dairy cream cheese, and artichoke hearts. Mash until smooth. Transfer to a container, cover, and refrigerate until cool.<\/li>\n<li>Add the vegan cheeses, onion, chives, salt, and pepper to the potatoes. Mix well, then set aside.<\/li>\n<li>Spread a thin layer of vegan margarine on one side of a baguette slice, then sprinkle with the garlic salt. Spread a heaping spoonful of the potato mixture on the opposite side of the slice and place it, potato-side-up, on a baking sheet. Repeat with the remaining slices. Sprinkle a bit of the paprika on each slice.<\/li>\n<li>Bake at 400\u00b0F until crispy, about 10 minutes.<\/li>\n<\/ul>\n<p><em>Makes 6 servings <\/em><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Easter Pie<\/strong><br \/>\n2 cups all-purpose flour<br \/>\n1 cup dairy-free margarine<br \/>\n1\/4 tsp. sugar<br \/>\n1 1\/4 tsp. salt<br \/>\n1\/4 cup water<br \/>\n1 lb. vegan sausage, crumbled<br \/>\n2 lbs. firm tofu, crumbled<br \/>\n1\/4 cup soy Parmesan cheese<br \/>\n1\/4 cup minced fresh parsley<br \/>\n1\/2 tsp. fresh ground pepper<br \/>\n1\/4 tsp. cayenne<br \/>\n1\/4 tsp. paprika<br \/>\n1\/4 tsp. ground fennel seeds<\/p>\n<ul>\n<li>Preheat the oven to 350\u00b0F.<\/li>\n<li>In a food processor, combine the flour, margarine, sugar, and 1\/4 teaspoonful of salt. With the machine still running, add the water to form a dough ball.<\/li>\n<li>Divide the dough into two balls and set aside.<\/li>\n<li>In a large bowl, combine the vegan sausage, tofu, soy Parmesan, parsley, remaining salt, pepper, cayenne, paprika, and fennel seeds.<\/li>\n<li>Roll out the dough into two 11-inch circles. Place one circle in a 10-inch pie plate and spread the filling mixture over it.
