I didn\u2019t for a long time. Just thought they looked  cool!\u00a0Luckily, I figured it out. If you have one stashed or know someone who  does, pull it out and get started!<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1024\" title=\"clay pot2\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2009\/12\/clay-pot2.jpg\" alt=\"clay pot2\" width=\"300\" height=\"225\" \/><\/p>\n<p>Soak both\u00a0top and  bottom\u00a0in sink full of water 15-20 minutes. Drain.<\/p>\n<p>Fill with chopped  veggies, herbs (no liquid or oil), cover and put in <em><span style=\"text-decoration: underline;\">cold<\/span><\/em> oven. (Preheating  will crack it.) Turn the oven temperature up <em>gradually<\/em>.<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1025\" title=\"clay pot3\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2009\/12\/clay-pot3.jpg\" alt=\"clay pot3\" width=\"300\" height=\"225\" \/><\/p>\n<p>Start at 200 degrees  for 10 or 15 minutes. Then go to 250 or 300. Wait 15 or 20 minutes more. Turn up  to 375 or 400. (450 or 500 degrees max.) Depending on what you put in, it will  be done in approximately 45-60 minutes\u00a0from start  time.<\/p>\n<p>Or&#8230;just set\u00a0oven  at 200 and leave it for 2-3 hours. (I love doing that.)<\/p>\n<p>Kind of like  crockpot cooking&#8230;exact times are not necessary. Hubs prefers the faster cook  method. I like the slow one. Anything in between works,  too.<\/p>\n<p align=\"center\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1026\" title=\"clay pot4\" src=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2009\/12\/clay-pot4.jpg\" alt=\"clay pot4\" width=\"400\" height=\"301\" srcset=\"https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2009\/12\/clay-pot4.jpg 400w, https:\/\/www.happycow.net\/blog\/wp-content\/uploads\/2009\/12\/clay-pot4-300x226.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Serve hot with olive  oil, Bragg&#8217;s, fresh ground pepper, lemon wedges&#8230;salad and fresh baked bread go  nicely, too.<\/p>\n<p>Clean clay cooker  with a brush and hot water &#8211; no soap. When dry, store\u00a0with lid upside down on  top.
