    Mmmm…the pizza looks delicious.

    Eric, how does a vegan restaurant cultivate customers who are not vegan? Could you please share some tips with us? It seems like most veg*n restaurants think the way to do this is to offer meat on the menu. How else can vegan restaurants get meat eaters in the door?

    First, an update: We do not offer GF pizza at this time. I can’t remember when this interview was conducted, but it’s been a while now.

    Next, to happycowgirl’s question: It’s a matter of appealing to what people are interested in, whether it’s the health angle, faux meats, comfort foods, a combination of those factors, and on and on. The successful businesses I’m seeing design their menus to appeal to the average person’s palate, like Native Foods and Veggie Grill.
