Visited Arequipa in June 2006 and was very impressed to find 7 vegetarian restaurants (couldn't gather all their details)... and I am told there are several more near the University away from the centre of town. They are all located pretty much in the historic part of town, near some hostels, just a short walk from the central square. There is Hare Krishna style Indian food, Chinese style and best of all plenty of traditional Peruvian options on the menus (after all, where else in the world will you get real Peruvian food?!). In fact being a veggie in Peru is not so hard. Most restaurants are waking up to the need for a vegetarian option (especially in towns bustling with tourists). Arequipa is becoming quite cosmopolitan with Italian, French and even Turkish restaurants now open. So Pizza and Pasta are not hard to find and the markets and supermarkets provide you with a great variety of fresh produce (and salted snacks like baked broad beans and giant Cusco corn).
