Our biggest surprise in Cartagena was a truly stellar salad bar at a cheerful lovely cafe (part of a small Colombian chain) called Crepes and Waffles, which is on Calle Baloco in the 'Centro' (old city center). Although Crepes and Waffles is far from veggie, they have a salad bar that offers a fresh, creative, nicely presented inexpensive selection. The highlight was a flavorful bright dressing -- but all the vegetables were fresh and favorful.
