	Review: Several years ago I worked for a company headquartered in England. Within a couple days of beginning work there, I discovered curry. And so it is that I regularly enjoy Indian cuisine. Last night three of us went out to dinner, eating at the Bombay Express restaurant, 733 East 3300 South, here in SLC. The menu has the most extensive Indian menus I have ever seen, and affords great opportunities for trying out foods from different regions of India. Whoohoo! The restaurant's owner is the cook, and it's obvious he knows how to prepare Indian cuisine!! We ordered a couple of appetizers, and two entrees, and that combination filled the three of us! While we did not have to, we ate family style so we could try out each item. Given that curry can vary from mild to wild, it's good to know that Bombay Express will adjust the curry to fit your palate. When we finished, we were stuffed! The food was really good. What seemed puzzling was that we had the whole restaurant to ourselves. Asking our server about it, there have been problems keeping the place staffed. My thought is that the owner makes a great cook, but not the best manager. Even with that said, I will be returning to eat there again.   Pros: Great food * Ample portions * Cons: Lack of staff * *
