Two course meal with wine and coffee cost around 20 Euros. Smoking permitted. Try the couscous and the desserts. Open 9pm in evening, maybe also lunch time. Closed Sunday and Monday morning. Price: Moderate.

Review: I was here in October 2009 and ws somewhat disappointed. The location is not very prominent (down a small side street next to a square (a nearby cafe advertises the availability of soya milk for anyone who fancies a vegan cola cao btw).
The restaurant is below ground level and the lighting and decor seemed shabby (some bare eco bulbs and tatty walls. There were tables for quite a few people however at lunch there was only one waitress. She was very knowledgeable about the ingredients and which items were vegan (not very many save the salads, soup and falafels.
To me the portions seemed small for the price (small juice €2.50 Falafels 7€) and lacked in flavour. All in all a bit disappointing.
Pros: some vegan options * knowledgeable waitress * not too far from centre of town

Review: O Triangulo das Verduras is closed all day Sunday and open for lunch time only on Mondays. Open for lunch 1.30pm-4pm and dinner evening times the rest of the week.
Very centrally located, with clean and pleasant interior, with approximately 50 covers. The menus changes daily and I ate lunch there twice for euro 11.50 for three courses, selected from the menu of the day,including bread. However you can also order courses individually from the menu but this tends to work out more expensive so it's best to just go for the three courses and do as I did and get coffee in lieu of dessert if you're full after the first two courses.
I didn't make any evening visits, so I don't know if the same deal is on offer then.
On the days I ate there, there were 4-5 options for each course, with two vegan options for the starter, two vegan options for the main and the only vegan dessert option being a fruit compote.
The gazpacho soup was delicious and refreshing. Hoummous on the second visit was okay but nothing too sensational. My mains were pretty decent; falafel with salad on visit one and the second time, quinoa with mushrooms, both simple but tasty and portion size just right.All the food was hot and tasted freshly prepared. The apple compote was pleasant and not as bland as previous compotes I've tried, being enhanced with a little spice and some sultanas.
I think the menu would benefit from including some tofu and seitan in some of the vegan dishes. However, as the Happy Cow listing states, this place is something of an oasis in a vegetarian and vegan desert. Staff were friendly and a little English understood and staff certainly able to identify which options were vegan and which weren't. Overall, a good experience and the only real option for veggies and vegans in Santiago.
