Best/most vegan friendly Indian food in Boulder

If there's one non-veg restaurant in the Denver/Boulder area that I wish I could give 5 stars to on this site, it's Nepal Cuisine. As of this writing, I've been there twice (and not even for the *VEGAN* lunch buffet they have every Monday, which I'm very excited to try in the near future). Even for their normal, non vegan buffet, the majority of the items are vegan (I think they had 2 dishes with meat and the saag had cream, but that was it) and absolutely delicious. The owners and all the staff have a very clear understanding of what is vegan and what isn't, and were all superbly friendly. The pakoras are the best I've ever had. I've eaten at probably every Indian/Nepali restaurant in Boulder, many of them before I stopped eating meat several years ago, and I can confidently say that this is the best one, regardless of whether you're a vegan/vegetarian or not.
Pros: VEGAN Monday lunch buffet!, majority of buffet items vegan anyway, owner is very friendly and knowledgeable
Cons: not fully vegetarian, location a little hard to find at first
is the vegan deal only monday lunch, or is all lunches and you were there on a monday? I was outside there once looking at the menu and it seemed like slim pickin; thanks for reviewing it.
