Best resturaunt in Aspen

I love eating here. I grab a book and sit down to a fresh squeezed juice or an Iced Chai. Every season the menu changes but as of right now I love the stuffed poblano for lunch with the lentil and chick pea soup. When I come for dinner I usually have to choose between the Spaghetti Squash over cashew creamed farro risotto or the Quiona Stir Fry. IF I feel like splurging I will get the Coconut Creme Brulee.

Great for vegans and for gluten-free diners!

We celebrated our 28th anniversary at Pyramid Bistro and the food was incredible. The staff were wonderful and attentive, and the restaurant was just beautiful. Everything we ordered was both gluten-free and vegan, so we could share, and it was all delicious. We started with the vegetable spring rolls and potstickers served with drinks including agave lemonade and a coconut lime electrolyte drink. For our main courses we had the crispy flaxseed gnocchi and truffled mushroom gallette, both on a bed of organic vegetables. I had to try their desserts after this, so got the chocolate tart and creme brûlée, again both vegan and gluten-free. It was a heavenly meal, and even the customers seemed friendlier than in other restaurants. Afterwards we wandered through the bookstore that is part of the same old house, then took a stroll through the town of Aspen. Thank you Pyramid for a heavenly meal and a wonderful anniversary! I hope I can go back to Aspen just to dine there again. Only reason for 4 instead of 5 cow rating is that I can't score higher for non-vegetarian restaurant.

New Chef, Great Food Now

With a new Austrian Chef, Martin Oswald, Pyramid Bistro rivals Millennium in San Francisco for the best vegan in the US in my opinion. Pyramid is now organic with fish and vegan alternatives...even oil free on request.

Pros: Organic, Very healthy, Great flavors
Cons: Not 100% Vegan

I went to this location when it was under the old name and still remember the tasty sandwich I had there 7 years ago. Under the new name, Escape is "veggie-centric" meaning mostly veg*n, but serves fish. The menu states that they will make any dish vegan if they can upon request.
Everything that is vegan is labeled w/ a ying-yang symbol.
The sandwich I ordered, Tofu Vietnamese Hero, was labeled vegan, but was served to me w/ a side of mayo. It looked like regular mayo, so I asked and it was. The sandwich was very dry, though the tofu had a nice flavor. My SO ordered Ranchero Tostadas, which was not labeled vegan, but asked for it to be vegan (which meant leaving off the cheese.) His dish was beautifully prepared w/ finely chopped veggies, avocado, black beans, fresh greens. He devoured it.
For dessert, they had two vegan options. Carrot cake and chocolate mousse. We got the mousse, and it was decadently thick and rich.
Though I wasn't excited about my selection, my SO was and there was several interesting sounding dishes I would have liked to try if we would have been in the area longer. We will definitely go back the next time we venture to Aspen.

I miss the old Explore!

I went with a friend to try the new Escape after they remodeled and gave the place a facelift. If only they'd kept the good parts of the menu! Nothing was awful, but this is no longer the place I take friends to prove how amazing vegetarian can be. The friend I went with got a "sandwich" which was basically tofu on toast. No veggies, no sauce, nada. It came with yam fries (pretty good) and black bean soup(bland), but that didn't make up for the price paid for the meal. I got a beet salad (which was good) and pasta (which was bland and unexciting). From now on I'm going to the Cantina (also on Main Street) and getting the Vegan Tower or veggie enchiladas (and their not bland vegetarian black bean soup). Previously such a fan of the Explore Bistro! :(
Maybe they're just getting on their feet again after the remodel, but they've been open for over nine months now. I did notice the tostadas that I loved from the previous Explore are still on the menu, maybe they managed not to ruin those. It's like the added fish to the menu and forgot that vegetarian food can be amazing. Prices are comparable to other restaurants in Aspen (which you get used to if you live here).

The food was definitely not mentionable, especially for the price. I'm in pretentious Aspen, shouldn't the food be pretentious too? The choco-orange mouse was good though and the service was great. My waitress was very kind and brought me a complimentary corn muffin, also she was wise up on what was vegan. Mostly Organic and local at least, and maybe I just chose a poor menu option.

Pros: Great wait staff, Mostly OG and local, Bookstore
Cons: Bland?, Pricey
