Respond to Review of M.A.K.E. Raw Cuisine
Review: I had one of the best meals of my life last night at a private pre-launch party for a new raw food restaurant called M.A.K.E. For those who feel that raw foods may be healthy, but are often lacking in flavor are in for a treat of a lifetime. M.A.K.E is the latest addition to the Santa Monica Place third floor space called "The Market". The detail in each of the dishes we ordered was extraordinary, and the quality of ingredients was unsurpassable. We started with a delicious bartlett pear soup drizzled with juniper oil. The flavors were so delicate and intricate, that even adding a drop of olive oil to this soup would have negated many of the more delicate flavors. The buckwheat toast crackers with smoked cashew spread were equally delightful. Washing down these appetizers with fresh coconut water was a wonderful treat. The next course consisted of several intricately flavored and textured salads. There were wonderful surprises around every corner with each salad bite. Like the appetizers, the flavors were perfectly balanced and distinct, while every element worked together in perfect harmony to provide much more than just a salad, but a memorable experience. The entrees were the some of the best I have ever tasted. The market tomato, zucchini, macadamia, Santa Barbara pistachio, basil dish (none of the dishes were named on this special menu) resembled a "raw lasagna" that I have had at several raw restaurants, but M.A.K.E.'s chefs have taken this dish to an entirely new level. There was such a variety of unique flavors and textures that I couldn't help but eat extra slowly to savor each and every bite. Another one of the entrees, called "red beet, watercress, hazelnut, meyer lemon" resembled beautifully prepared and presented red gnocci,. The subtle flavors and smooth texture of this dish created the gourmet version of this perfect comfort food. Just as it felt like our meal could not get any better, a chocolate walnut cake, licorice pear, fennel, and sasafrass dessert was placed in front of me. I had to hold myself back from wanting to devour this masterpiece. As with the earlier courses, this final touch was as good as it gets. Elegantly prepared and presented, and the complex flavors created a divine symphony in my mouth. M.A.K.E presented us with some of the best food I have ever experienced, and the elegantly detailed preparation and food presentation bring raw food cuisine to an entirely new level of perfection.
