Review: My first experience with Aqui was at their Campbell restaurant. The food was kind of the norm for Cal-Mex and I wasn't especially impressed. It was good, but it wasn't outstanding. Recently I went to the Cupertino restaurant with a friend, and the food is still pretty good, but leaves much to be desired for vegans. I have a feeling I'd have a much a better impression if I were lacto-ovo vegetarian, and much better options. Otherwise, you're pretty much stuck with a salad or appetizers. My friend, of course, was pleased because he's omni. What *is* really cool is Aqui does designate the vegan dishes/ingredients on their website, the down-side is that the selection of vegan dishes are incredibly sparse, though I'm sure you could have some of the vegetarian dishes modified to your specifications to remedy this? Maybe?

Yeah, their vegan options are a bit lacking. I've contacted the owner about other vegan options and was told that even items that look like they could be vegan without cheese and the like would not actually be vegan. Her reasoning was that the line cooking method they use means that there is a high likelihood that your food will unintentionally have dairy in it, and that they use a lot of dairy, cheese, and honey even in items that you wouldn't expect it to be in. Also she mentioned something about a disagreement with the chefs who are unwilling to change their recipes/methods to be more vegan friendly.
