Review: As Kim says, "It's hard to eat vegan in Taos." However, chef Lesley Fay has not forgotton us when she created her menu. My go-to staple on the weekends is the vegan delight, which is sauteed tofu and veggies, with has browns and fruit. It is available for breakfast during the week, and all weekend long. Another new fave is the vegan enchiladas, which are 3 huge veggie enchiladas wrapped in corn tortillas, enchilada sauce, black beans and Mexican rice. I usually have enough to take home for dinner. The most exciting development is the vegan Panna Cotta. Think creme brulee meets flan. Coconut milk based and absolutely decadent!
