1 cup quinoa
2 tablespoon extra virgin olive oil
1 bag vegan cheese shreds
1/4 teaspoon sea salt
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1/3 cup pumpkin seeds
1/4 cup dried cranberries
Cook quinoa according to package directions. Set aside.
In a large bowl, combine cooked quinoa with remaining ingredients. Mix well to combine. Serve warm or at room temperature. - shared by Go Veggie! Foods
