Raw Tomato Pasta
4 zucchini (courgette) peeled, mandolined or spiralized
4 tomatoes, diced
1 red capsicum (bell pepper), thinly sliced
1 carrot, grated
4 dates, soaked
1 lemon, peeled
bunch of coriander, chopped
Spiralize, mandoline, or peel zucchini to create the pasta.
Blend tomatoes, dates, lemon and coriander together in food processor.
Combine zucchini, carrot and red capsicum in bowl.
Add the liquid mixture to the vegetables and combine.
Number Servings: 4-6
Time to prepare: 30 mins
