2 slices of your favorite bread
2 pieces of lettuce, cut into shifonade(strips)
1/4 cup (10 gram) smoked, dried cocounut flakes
1 tablespoon (10mL) veganaise spread
Toast your bread slices. Once toasted, place pieces side by side on your work space and spread vegenaise on upward facing side of each slice.
Sprinkle coconut flakes on one upward facing slice of your choice.
Take your tomato and slice it into 1/8 inch (1/4cm) slices. This should yield about 5 or 6 slices, keep 4 of the center slices and save the rest for a tomato sauce or something.
Place the four tomato slices on top of the bread piece with the coconut already on it. Place the lettuce on top of the tomato slices.
Take piece of bread and close the top of your sandwich with vegenaise side facing down on to the lettuce.
